Notes: ---Tratamiento del agua para macerado con sales. Subir pH porque las maltas, sobretodo las negras, acidifican el agua.

---Comprobar el pH de mosto (entre 5 y 5,5)
Equilibrar el pH del mosto y del agua de lavado.
+Mantener circuito con unos 2 cm de agua por encima de la malta para evitar oxidación.
---Añadir, según calculadora, agua a 75 grados (Dilución de mosto con agua).
+Acordarse d esterilizar el agua restante (necesitamos 220ml máximo, para hidratar la levadura a 29 grados).
---Comprobar densidad.

---Hervir en función de la densidad inicial. Aprox. 75 mins.
---Añadir lúpulo según datos arriba.
----A falta de 15 minutos, añadir Irish Moss y nutriente levadura.
---En este momento, preparar starter de levadura. (2 sobres de 11gramos en 220ml de agua a 29 grados) Remover y dejar reposar una media hora tapado con papel albal. Sanitizar todo perfectamente. Es muy importante en este momento.
---Medir densidad antes de fermentar.
---Mantener primeros días a 16/17 grados e ir subiendo hasta 20.
---Fermentar 3 semanas en primario.
---Reposo con adicciones en secundarios 4 semanas.
---Embotellado. Reposo durante 16/20 semanas.

Mash grains for 60 minutes (starting temp 160 F, ending temp 148 F). Add 8 lbs LME to boiling H2O, return to boil. Add 2.5 oz Simcoe pellets, boil 30 minutes. Add 2.0 lbs DME, add wort from partial mash, return to boil. Add o.5 oz Simcoe and 0.5 oz Azacca pellets, boil 15 minutes. Add Irish moss, boil 15 minutes. Remove from heat and add 0.5 oz Azacca, let sit for 10 minutes, stirring occasionally. Cool in cold water bath. Add 1 tsp Fermaid K and pitch yeast.

Rg = 1020 on 1/13/18
Bg = 1019 on 1/28/18
Notes: Nice creamy head. Hop wallop. Little hop aroma. |
