Also added one 29oz can of pumpkin in the boil kettle with 15 minutes left. The other 29oz went in the mash tun.

Maturar apenas 21 dias, mas deixarei as garrafas guardadas até o evento. Minha geladeira consigo colocar até -2°C, nesta cerveja quero maturar oscilando entre -1°C a +1°C.
Nesta receita, vou usar 6,5gr por litro. Ou seja, 130gr para 20l. Como posso não ter exatamente 20l, posso ter uns 19l no tanque, essa medida (130gr) daria cerca de 6,8/6,9gr por litro. |

Mill the grains and mash at 148°F (64°C) for 30 minutes. Vorlauf until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6.5 gallons (25 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, adding boil hops according to the schedule. After the boil, stir to conduct a whirlpool, adding the correct amount of ambient-temperature water to hit target gravity and bring down the wort temperature to 192°F (89°C). Whirlpool with hops for 10 minutes, then allow 15 minutes to settle. Chill the wort to 66°F (19°C), aerate well, and pitch the yeast. Ferment at 68°F (20°C).
Once fermentation slows, rack off of yeast or drop yeast out of the conical, transfer to a sanitized and CO2-purged container, and add dry hops at 68°F (20°C). Once the beer clears diacetyl tests (see “Hunting for Diacetyl,” beerandbrewing.com), crash to 28°F (-2°C) for 3 days. Then package and carbonate to desired level. |

Notes: Recipe from pork chop on Northern Brewer. Mash and Sparge as usual. Boil for 5 minutes. Chill to 110f. Add food-grade lactic acid if available to get 4.4-4.7 pH, (5mL). Add entire carton of Goodbelly. Seal kettle and leave at 110f for 1-3 days, depending on desires tartness. Taste test- sweet and tart like lemonade. Check pH, 3.2-3.5. Boil for 60 minutes to eliminate DMS. Chill to ale pitch temp and add 3 packets of US-05. fermentation 10-14 days. Add minimum 15g sea salt per 5 gallons. 15g coriander at flameout if wanted. Recipe called for 2 packets of yeast for 5.5 gallons. |

May have been a little too ambitious with this one, I didn't get nearly the efficiency that was calculated, and I don't think I can blame it all on too much water this time.
Hops are adjusted in recipe as per each package AA's
Used 3 liter starter and made a big blow-off mess. After 24 hours the krausen was spewing so violently out of the airlock that it blew the top off of the fermenter; twice.
Will update numbers when finished, at least four weeks
2/2/21 - UPDATE - FG of 1.011 for a whopping attenuation of 85%. Sugar primed keg, will wait 2+ weeks
Actual Results:
Total water: 11.5 gallons - would lessen to 10.75 - 11
Pre-boil volume: 8.25 gallons - would lesson to 7.75
Ending kettle volume: 7 gallons - would lessen to 6.5
Boil time: 90 min

Add 0.5 kg of fruit puree at the start of fermentation and add the rest (1.5kg) after racking off the yeast cake into secondary fermentation for 5 days. Cold crash and bottle or keg ASAP after to avoid the fruit character being lost.

Mash with:
1/2 tsp Calcium Chloride
1 tsp Epsom Salt

Boil:
- mix all boil hops together (6 oz) and split into 24 equal size additions of .25 oz each
- add one hop addition every 5 minutes during boil (measurements in ingredients set at 1 hr, average time in boil)
- remove 1 pint wort (@1.193), mix with 2 pints water and make starter (@1.064) for WLP099
- mix 3 Qts wort (@1.193) with 1 gallon water for primary (@1.083)
***Use plastic fermenter with lid to allow for easy wort/hop additions***
- pitch 1056
- put remaining ~2 gallons wort (@1.193) in sanitized container, refrigerate
Primary Fermentation:
- Wort addition

Notes: 1) Treated water and got strike water up to 160 before mashing in. Mash was fairly straightforward but had to heat a couple times as mash sat around 152-154. I stirred 15 mins in and raised the heat to get up to 154 then let mash rest for the remaining mash time.
Mash PH: 5.7
2) Boil went as planned, added hops as recipe called for. I did make a last minute decision to add the 5 min boil hops, but pulled those out of what would've been all whirlpool. Thought it might impart a little more flavor.
3) With 5 mins left in boil, I added the corn sugar and boil hops then at end I immersion chilled to 160 and dropped the whirlpool for 30 mins.
4) I continued chilling which got to about 80F then transferred to the fermenter, moved to temp controlled ferm chamber to cool to 68F before pitching yeast.
OG: 1.064 - missed by .02 from recipe - I did measure this when the wort was still about 80 degrees and was filled with trub so not sure if that had an impact...
5) After temp was stable at 68F, I pitched the ballooned packet of activated yeast and shook the fermenter like hell. *Thanks amazon for not delivering my aeration kit today as you were supposed to...
6) 12 hours in and fermentation is going very strongly. I have a blow-off tube in a jug of sanitizer that is bubbling every 5 seconds. I'll continue to check ensuring their is no clogging from krausen.
7) Dropped Dry Hop as scheduled and pulled a samp!e at 7 days to check gravity. Its reading 1.010 which is off target. Beer tastes very good though. Checked again 2 days later and its still at 1.010 and even better aroma and taste with the second dry hop kicking in.
8) Lowered temp to 38 to cold crash for 2 days to prior to kegging.
9) Kegged with no issues and set carbonation to 2.3 vols. I sampled after 4 days and it's fantastic. Nice milky/pillowy mouthfeel, slight bitterness, and tastes like straight Orange juice.
