Notes: This is modified from Alan Sprints owner Hair of the Dog's barleywine called Adam to fit into the Grainfather G30 with a small mash tun. ingredients were mostly divided in half from his original recipe and slightly changed because of lack of exact grains being available. Colors and flavors of the specialty grains are approximated by Sean Null. Local Juniper berries are my twist. 2 pounds Demerara Sugar added to bring up ABV and add caramel flavors lost in the shorter boil.
Evaporation wasn’t as much as usual. Ended up at 6 gallons in the fermenter.
This batch was not tasted. It sat in a plastic fermenter for 18 months and honestly it was probably OK to bottle, but I wasn't feeling it. I have a G40 now with a bigger grain bill size and a better shape for brewing than the G30. I may attempt this on 4/6/2025 without the brown sugar addition and name it Adam. |

I roused with c02 kegged half on honey shooting for 3.3vols. Other half went into a smaller fermenter with 4.5lbs of apricot puree. 3/29/2021

Really been letting these sit because why not and busy. Both sitting at 1.001-1.002. Kegged the apricot on honey to carb for two weeks will bottle some of the base beer for aging and put the rest on tap. 4/13/2021

Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks. |
