Notes: T0 (Mash):
Bring 1Gal of water to 160F, with salt additives
Add all Grains to Bag
Turn off heat, add brew bag to water and stir to break up clumps.
Verify water temp is ~150(and adjust) and put lid on.
T60Prep:
Fill electric kettle with water
Measure 60m Boil Hops
T60 (Boil):
Raise temperature to 170f for mash-out and stir.
Remove grain bag.
Heat up full kettle to 212f
Heat mash to a boil
Turn off heat
Add 4LB of Pilsen malt extract
Add 1LB of Golden Light Extract
Add hot water to "fill" pot
Turn heat on and bring to a boil
Add 60m Boil Hops
T90:
Add 3LB Golden Light Malt Extract
T110:
Add 10m Hop Addition
T120:
Add 0m Hop Additions and let chill
T120 (Chill and move to fermenter):
Move brew pot to water bath to chill
TWortChilled:
Once wort + water are in fermenter at 70degrees

Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks. |

Notes: We saw a Cluster Fuggle on a menu in Cleveland. Never got to taste it in our travels. Bad scheduling versus brewery open times. So my daughter has been urging me to make one up.
Since Cluster is a historically native NorthAmerican hop, and Fuggles is English, I decided to split the hops and the grains right down the middle with some caramel added for color. We're a melting pot, right?

WHAT's CHANGED: Changed around water profile for PROP batch (less calcium, more Na, 1.5:1 So4:Cl ratio vs about .3 before (greatly favoring Cl)). Also changed the water profile to this on the full beer also. Will not have quite enough vic secret so either using less in DH or adding a couple lbs galaxy. ADDED WHIRFLOC TO KETTLE FOR FIRST TIME EVER (only 1/2 the recommended dosing rate) and MADE FIRST BRITE TANK TRANSFER EVER ON IPA.

BREW DAY NOTES: added 2 oz phos acid post boil bc pH was 5.12. This brought it down to . Added 10 whirfloc tabs at end of boil (1/2 dosing rate) to try and minimize protein content into FV.
MISTAKES:
FERMENTATION: KO at 62, set temp 64. Held for 3 days and upped to 70. Dry hopped on day 3 (**2.4LBS/BBL vs 3LBS/BBL LAST TIME (25.5lbs vic secret and 3lbs 2018 galaxy bc not enough vic secret)). NO ROUSING EVER. Dropped trub day 5. Gravity 1.017 and pH 4.5. Gravity day 6 1.016 and pH 4.56. Fermenter capped on day 6 while temp still at 70 to induce the dropping out of polyphenols. Day 8 (6/29) dropped temp to 60. Dropped temp to 50 on 6/30. PSI got to about 4.5psi and stopped. Crashed on 7/1. 7/2 dropped trub from cone and racking arm and made FIRST BRITE TRANSFER. PROCESS: 15 psi on receiving tank, purge, 12psi, purge, fill it to 5 psi, let sit at least 5 mins and started the xfer. Very slow to start and increased on sufficient level of beer as to not agitate for DO pickup. Knocked head pressure to 10psi once transfer complete and set temp to 33.5. Will continue to raise head pressure back to 10psi each morning to induce more dropping out of things.

RESULTS: Excellent beer. Reminds me of the first batch but out of the tank drinking like its in its prime. No harsh bite at all. Looks like the brite transfer is helping that issue |
