Notes: Decoction Mash. Started low at 125F, infuse to 145, pull decoction, heat to 158F rest 15 min, boil, return to main mash to get 155F. Rest 30 min, pull decoction, heat to boil, return to get 165F. Recirc.
Urkel yeast didn't kick in, added 34/70 after 6 days.
Despite problems during the mash and fermentation, this beer is excellent. Great malty pils with nicely balanced hops flavor.

Notes: Add 8 pkg of Kroger Peach Tea powder prior to kegging. Each pack is for 1/2 gallon of tea. Didn't carb too much as it's tea. I've found that for some reason 1 yeast pack doesn't seem to finish the fermentation.
I've started now with just 2 gallons of water that I bring to 180 degrees. I cool it while I clean just enough to drop it to a low enough temp to go in my Big Mouth Bubbler. I'll then top off with tap water (I live in Memphis, our stuff is good) Super fast and easy. Brew to fermenter is under an hour.

Mash pH was 5.58, need more acid or salts next time (no salts in mash this time). Maybe the CaraHell needs more adjustment than the barke pils?

Single-step infusion mash at 147°F (64°C). To avoid oversparging, use a thinner mash (around 3.75 gallons/14 liters of water) and adjust the sparge water accordingly.
Boil for 60 minutes, following the hops schedule.
Chill the wort to 65°F (18°C), pitch the yeast, and place the wort in a 60°F (15°C) fermentation chamber for 5–7 days. Raise the temperature to 65°F (18°C) for 1 day for a diacetyl rest. Rack the beer and age at 35°F (2°C) for 21–30 days, then keg or bottle. |
