Notes: Only use Koshihikari rice from the Niigata prefecture.
Cook the rice by boiling it with a 2:1 ratio of water to rice on very low heat.
Once all the water is gone, and the rice is cooked, let it steam with the lid on and the heat off for 10 minutes.
Place the rice in a large bowl or pot, throw in the wheat malt and mix it with the rice and wait an hour or so. The amylase from the wheat malt will give the rice a head start.
At this point, you can use it for your mash. |

| Notes: This is my first iteration of my journey to try and tackle the Northeast IPA style. This style typically has bombastic fruit and citrus flavors with an appearance that is extremely cloudy and has soft mouthfeel. This is because of the massive dry hop additions, low flocculation of the yeast and the wheat additions. The water is usually CaCl rich to add to the softness. Some of the best IPAs like Heady Topper, Trillium and Mad Hatter are of this style. |

| Notes: The name turns out to be misleading on this IPA. Although it is a very tasty beer, there is no hint of "dankness" - more of a tropical fruit aroma, fairly strong bitterness, and a bit too much sweetness from the C-60. |

Notes: Ended up with a nice malty beer. Primed with DME. Perhaps fermented at too high of temps making this beer very estery. I am slightly disappointed with the overall outcome of this beer. A little lighter than I wanted for color, if brewed again, I would prime with corn sugar, and more of it. head/retention is low, perhaps needs more time in bottles before being ready to drink.
Update: this beer has sat bottled for several months and now tastes great. The eastery profile of the yeast has mellowed and now this beer tastes the way I wanted it to. |
