Notes: Pumpkin Prep:
You need to prepare the pumpkin a few days in advance of the brew day. Using a large knife, halve the pumpkin, remove the seeds, and cut the halves into pieces about 6 inches (15 cm) long.
Cover some cookie sheets with aluminum foil, arrange the pumpkin pieces on the cookie sheets, and sprinkle them liberally with brown sugar.
Roast in the oven at 375°F (190°C) until soft. This usually takes two to three hours. During roasting, the brown sugar will melt and caramelize onto the pumpkin, providing extra flavor.
Remove the pumpkin from the oven and let cool. Then peel off the pumpkin skin, dice the flesh into large cubes (being sure to save the juice for its color and flavor), and store in a covered bowl in the fridge.
On brew day, let the pumpkin warm to room temperature and put it in the kettle for the duration of the boil. (As an aside, for those who are into sustainable brewing, the boiled pumpkin flesh makes excellent pies.)
To avoid a mess in the kettle and clogged valves or siphons, put the pumpkin into either a large fine-mesh bag designed for fruit or a hop spider equipped with a paint-straining bag.

| Notes: Strike water should be 15F above desired temp, but not sure how the pumpkin will impact the temp... if it's cold might go with the normal 22/23F temp loss? The vodka infused vanilla bean and the extract will steep for a couple weeks with each other and will be added before bottling. Roasted pumpkin in the oven at 350F for 60min. Mash looked really think for some reason and the temp was way lower than usual. I had to top off so much I just left it at 152F instead of 154. Not sure why, I did just get a new mash paddle so that might be the reason. Sparge was super slow and I had to stir it while I was sparging to prevent it from being stuck. I did a hybrid batch/fly sparge. Next time will probably use a whole pumpkin to prevent this. The OG actually may be lower because of the large amount of pumpkin floating in the wort. |

Use PH Stabilizer to get mash liquor to 5.2
Add in Thawed Frozen Mangoes towards end of primary fermentation. Buy fresh mangoes, skin and slice and add sugar, then freeze. Unfreeze then smash into pulp, add pulp into widemouth fermentation chamber (big mouth bubbler or brew bucket).
This late primary add is in addition to the 2 lbs used in the boil, so there should be a total of 4 lbs mango in this recipe.
Should age at least 6 months, but preferably a year or longer.
Ferment hot and relish the milky white film on top of the brew. |
