Notes: Cutting 1lb of Pale or Wheat will get the beer around 107 cals, closer to 100 calories. Because each home brew system is a bit different, I do it this way to make up for possible loss in efficiency across the board.
Brewing Salts
**4oz Mango, Strawberry, Raspberry, Blueberry, Blackberry, Cherry, Grapefruit, Kiwi/Strawberry, Passionfruit, Rhubarb, Pomegranate etc. Extract**
**These are the flavors I have tried so far.**
Keep this cheap and don't worry if you use other hops, change the grain bill etc.

Notes: Based on what Vinnie divulged, this is how I'd go about banging out a 5 gallon batch (don't think you'd want 10 gallons of this, hehe...) basing it on the requirements for an Oud Bruin...
Size: 6.0 gal
Efficiency: 80.0%
Original Gravity: 1.063 (1.040 - 1.074)
Terminal Gravity: 1.013 (1.008 - 1.012)
Color: 21.51 (15.0 - 22.0)
Alcohol: 6.58% (4.0% - 8.0%)
Bitterness: 22.1 (20.0 - 25.0)
Ingredients:
11.0 lb American 2-row
1.0 lb Caramel Malt 40L
1.5 lb Vienna Malt
0.5 lb Carafa Special® TYPE III
1.0 oz Perle (8.2%) - added during boil, boiled 45.0 min
Of course, add your whirlfloc and yeast nutrient. (This isn't an overly thick beer, we'd want to dry this out as much as possible.)
Nice starter of White Labs WLP530 Abbey Ale, or pitch at least two vials, and aerate the crap out of it. Hit it with O2 if you have a tank/diffusion stone.
Give it about 3 weeks in primary, keeping it above 70 degrees for the yeasties to do their thing. Rack when it hits 1.012.
Here's where I get fuzzy. Vinnie says that when this comes off to secondary, he removes the yeast. I'm assuming he's doing that by pasteurization? Either way, I doubt it'd ruin the beer if it's just racked as you normally would.
You'll need a bigger carboy than 5 gallons, to accommodate the cherries, so grab yourself a 6.5 gallon one.
Into secondary, dump a package of Brett, and give it another couple of weeks.
Into secondary, dump 2.0 lb mashed cherries, as well as a package of Belgian Sour Mix 1. For a full effect, soak 1oz of oak chips in some pinot, and add those to the secondary as well. Let that chill for 2-3 months.
Rack to a keg, stash for 6 months before carbing.
Hugely labour intensive beer, and man, if I tapped that keg after a year or so and it tasted like arse, I wouldn't be a happy bunny! |

Notes: Fermentation:
Start fermentation at 20C for 2 days. Raise temp to 25C. Primary 1 week, secondary 1 week. Made a robust starter with DME. This yeast is low flocculating in the starter, but a beast in the wort. There was a good inch of trub and a very thick krausen that acted like meringue. Definitely collected a generous sample for reuse. Force carbed at 20 psi over 2 weeks.
Tasting notes:
Tropical fruits on the nose and very mild spice in the middle of the tongue. Very warming, but no bite from the alcohol. The yeast imparts a sweet, bready flavour with a very mild toasty character. No hops or tannin astringency.
Recommendations:
Would make an excellent holiday ale with the addition of more spice, particularly clove, cinnamon and cardamom. Could up the bittering hops to suit your taste. Since the alcohol isn't on the tongue, watch out! |

- Total water used during mash
- Pre-boil volume
- OG & temp of wort before boil
- Post boil volume
- OG of cooled wort
- FG of fermented beer
- After collecting pre-boil volume from MT, collect remaining running's from MT and boil to a syrup, add back to boil kettle final 10 mins.

Notes: Well all went well. I used my jet burner for the first time and never will I go back to a normal burner. I did a 90 min boil and added the lactose at 60 minutes. It's fermenting now so we shall see. Bottle conditioning yet and it is pretty perfect. The color is beautiful and black the aroma is of dark burn grains , and the flavor is out of this world and very smooth. The hops is spot on I love this beer. |
