Notes: 1. Heat 8 litres of water to 75C in induction pot. Turn off heat and add BIAB bag, with the seam on the inside.
2. Pour in HALF the pale malt and flaked barley while stirring - get rid of lumps. Add remaining half and stir for 5 mins.
3. Check temp is 65-70: preferably 65-67C - adjust if necessary with cold water or add heat.
4. Wrap a thick towel round the pot and leave alone for one hour. Check temp is between 65-70c and preferably 65c- after half an hour. Stir. Add heat or cold water if not.
5. After 60 mins is up, lift out grain bag and put into colander above the induction stock pot, leaving the bag to drain for a minute or 2. Squeeze bag.
6. Use another 7 litres of bottled water and pour it over the grain bag. Leave 10 mins, stir, and strain the liquid to the induction stock pot. Should have about 13 litres, which will reduce when boiled for an hour.
Take pre-boil gravity following sparge and measure how much wort collected.
7. Dispose of grains, add all wort to pan and bring to boil. Boil for 40 mins then add 15g MAGNUM hops.
8. Boil for a further 10 mins then add 10g CITRA and 20g CASCADE hops.
9. Boil for a further 5 mins then add 10g CITRA and 20g CASCADE hops for final 5 mins of boil.
10. FLAMEOUT AT 60 MINS. When wort has cooled to 80C; add 20g CASCADE and 10g CITRA.
11. Pour wort into sterilised FV to cool (NO CHILL). Cover with lid. Once it has sufficiently cooled, add to a second sterilised FV via sterilised sieve to catch hops, and top up the level to 10 litres if necessary. Pitch 1/2 packet yeast at around 18 - 20C. Leave to ferment for 2 weeks at 18-19c in brew fridge. |

This is an English-style barleywine brewed once each year and then aged in oak barrels several months before being released each fall.
Ingredients
21.5 lbs. (10 kg) Maris Otter pale ale malt
1 lb. (0.45 kg) Special B malt (138 °L)
6.1 oz. (0.17 kg) Caramunich II malt
15 oz. (0.43 kg) brown sugar
5 AAU Fuggle hops (60 min.) (1 oz./28 g at 5% alpha acids)
3.75 AAU Challenger hops (30 min.) (0.5 oz./14 g at 7.5% alpha acids)
0.9 oz. (26 g) Fuggle hops (0 min.)
0.15 oz. (4.3 g) Challenger hops (0 min.)
8 oz. (227 g) Cascade hops (dry hop)
1.5 oz. (43 g) medium toast American oak chips
Wyeast 1728 (Scottish Ale) or White Labs WLP028 (Edinburgh Scottish Ale) yeast
¾ cup (150 g) dextrose (if priming)
Step by Step
Mash at 148 °F (64 °C) for 60 minutes. Collect enough wort for a 3.5-hour boil adding hops in the final hour of the boil per the ingredients list. At the end of the boil, give the wort a long stir and let settle for 15 minutes. Cool, aerate heavily and transfer to the fermenter. Ferment at 68 °F(20 °C) until finished, then transfer the beer into a secondary vessel with the sanitized oak chips. You can sanitize the oak chips by boiling them in 1 cup water for 15 minutes or you can try soaking these in wine or a spirit of your choice. Midnight Sun will barrel age Arctic Devil for 10–12 months in American oak barrels of various origins. We recommend 1-2 months on the oak chips, tasting regularly until the desired level of oak flavor is achieved. Dry hop the beer for ten days, then bottle or keg. Carbonate to 2.4 volumes CO2.
Extract with grains option:
Substitute the Maris Otter pale malt in the all-grain recipe with 15 lbs. (6.8 kg) Maris Otter liquid malt extract. Place the crushed grains in a grain bag and steep in 5 gallons (19 L) water as it heats up to 170 °F (77 °C). Remove the grain bag and allow to drain back into the kettle. Bring to boil and boil for 60 minutes, adding the hops according to the ingredients list. Follow the remaining portion of the all-grain recipe. |

Notes: I've cored 8 kg's of Amasya Apples and 1 kg of Golden Apples. Boiled them with 5 lt's of water, 750g's of brown sugar and 3 cinnamon sticks.
After the boil; I've blended the apple base, boiled for an hour more.
I've used Mangrove Jack's Old English Ale yeast (10g's) that comes with their Gluten-Free Pale Ale kit. I've added 20 lt's of drinking water, pitched the yeast directly into the wort at 29-30 degrees. OG was 1,028. Regular fermenting temperature was fixed at 20 degrees celcius after 2 days into fermentation.
After 4 days I've added a simple syrup I've prepared with 400 ml water, 750 gr's of regular sugar, 2 cinnamon sticks and two whole star anises. The OG was messed up after that.
The cider is in it's 9th day of fermentation at the moment; still bubbling away. I will bottle it into 200ml soda bottles with 5 gr's of regular caster sugar for priming and stevia to taste. Will use a syphon for bottling and won't use the pulp. |
