Notes: Pumpkin was baked at 350 for 60 mins, cooled, and then steeped with specialty grains between 150-155 for 60 minutes.
Sparged with 1 gallon of 170 water.
OG was 1.07 and FG 1.012. Not sure if steeping efficiency > 35% and/or pumpkin added some PPG.
Beer was good but a little too spicey. Would recommend cutting down on Nutmeg and Allspice. Also, steep grains for no more than 30 minutes. |

| Notes: I plan to make my first yeast starter for this brew, Will create starter 3 days before brew day and cold crash it. Will cool wort down to a temp of 45F prior to pitching the yeast starter. Will gradually raise the temp to 50F by the 36th hour and leave it there for the remainder of fermentation. Will then transfer to secondary and lager it for 2 months at about 33-34F |

| Notes: Spread pumpkin puree on baking sheet, cover with 8 oz brown sugar, bake at 350 for 30 minutes. Store in oven until wort is being chilled. Force through funnel in to carboy as wort is chilling. Syphon wort on top. Oh, add 1 tsp each ginger, cinnamon, and nutmeg at 5 minutes minutes of boil. Add one cinnamon stick to secondary. |

Notes: Two packets of Lalvin D47 Wine Yeast (only ferments to ~ 14%)
Yeast Starter directions from "Compleat Meadmaker" - 6.5 cups of water, tablespoon of Light DME, 1/2 cup honey, 1/4 tsp Nutrient, 1/4 tsp Energizer. Bring water, nutrient, energizer, & malt extract to a boil for 15 minutes, remove from heat, add honey, cover with foil. I'll let this sit on my stir plate for about 42 hours before pitching.
Warm a couple gallons of water to ~140 F or so to mix in the clover honey which was purchased at Costco. Use chilled water to bring down to pitching temp & volume up to ~5 gallons (I went up to about 5.75 gallons). OG for me was 1.12-1.13.
Then follow nutrient additions with 1/4 tsp energizer and 1/2 tsp nutrient at 24 hours, then again at 48 hours, then again after 30% of sugar has been depleted. Two weeks of primary before racking to secondary. Warm the organic "strawberry spread" from Costco in some ~140-150 degree water just to be safe, then rest until room temp, then add in to secondary for two more weeks before racking a 3rd time. |

Notes: I`m primarily using Heather honey in my mead. At least 60/40 when I use a mix of Heather and Flower honey.
2 liter starter @1.04SG, 2 stage.
Filipendula ulmaria ( called Mead spice locally ) was traditionally used as "flavoring", and is this brews source of tannin. Caution; Filipendula ulmaria is a natural source of salicylic acid. Steep the Filipendula ulmaria in 1 liter of water so that it makes a strong, pungent tea. Add the tea to the fermentor the 3rd day.
Add commercially prepared Apple Must/ Apple Juice ( without preservatives like Potassium Sorbate, Ascorbic Acid is ok tho ) to the fermentor the 3rd day. The pectinase will help break down any pectin.
Leave to ferment for 30 days. Store for an additional year after botteling. Enjoy =)
End notes:
It was, to my best knowledge, uncommon to use hops in mead. Nor was it common to use any kind of malt. Hops, malt and Achillea millefolium ( a hops substitute, called Beer king locally ) was most commonly use for brewing beer ( beer was for every day use and mead for special occasions ).
You could add a small amount of clove, ginger and nutmeg to make the brew spiced as well ( I use these spices with restraint as I do not want my mead to taste like gingerbread ). Boil the spices for 15 minutes and let the Filipendula ulmaria flowers steep to make the tea.
Carbonation was also rare at best, and then only lightly ( due to lack of pressure proof containers ). |
