Cool to 80c with ice then 20 minute hopstand with 0 minute hops divided into 3 lots and added every 7 minutes and 5c drop in temp - ice used to drop temp - then chill.

This is a basic video on how to harvest yeast from a previous batch of beer. All you need are some pint mason jars which you can get at Walmart or online at Amazon very cheaply. After you have a beer that is done fermenting leave all of the yeast cake at the bottle. Boil 4 mason jars for 15 mins. Remove the mason jars and fill them with the boiled water. Let them come to room temperature. At this point add the water from the 4 mason jars into the bucket with the yeast cake and swirl the bucket for about 30 seconds and then let it sit for 20 mins. After the 20 mins pour off the yeast sediment into the jars and then let them sit for about 1 hour. After the hour pour off the top layer of sediment in the jars into 2 additional mason jars. Try to pour off just the cloudy top layer and leave the trub behind. This is your final product. Make a yeast starter with the 2 jars you have harvested for better results. |

1 x WW APA Can LME (the can adds 30IBU and 6.5 SRM of colour)
1 x 3.0kg bag of WW DME
4 x US-05 Yeast (3 extra yeast required as 1 comes with WW APA kit)
Grains (Steep for 30 minutes at 66 degrees)
500 grams of Vienna Malt
450 grams of Medium Crystal Malt
300 grams of Munich Malt
200 grams of Acid Malt
Remove Grains and sparge with 4 litres of boiled water
Do a 60 minute wort boil to ensure long chain sugars are broken down (US-05 does not handle long chain sugars and so you will end up with residual sweetness from unfermented sugars if boil time is not 60 minutes)
Hops (additions starting with 20 minutes to go.)

10 grams Centennial
100 grams Citra
110 grams Mosaic
60 grams Simcoe

Notes: I used Marris Otter LME
Fermentation temperature was optimal for the first 3 days of fermentation. Then we had a heat wave and day time temps rose to into the 80's F. Used freezer packs and a swap cooler to keep fermenter temperatures 76-78 F.
Racked to secondary on day 7 and bottled on day 35 (4 weeks in secondary).
This is a malty, easy drinking game day ale; just enough hops to produce a slight twang and low ABV so you can enjoy more many while still making it through the 4th quarter and the post-game party. |

Aerate with O2 for 20 seconds. Added 1/2 nutrient in one cup water
staggered nutrient every other day to complete additions.

August 21- airlock still showing activity ~ 3 bubbles per minute
Sept 20 SG = 1.022. No airlock activity. Taste is still very sweet. strong alcohol notes. Needs more time. After opening bucket, flooded it with CO2 prior to reclosure
Oct 11. SG = 1.020 transfered ~ 2 g to cabroy containing 3 # raspberry puree
remainder transfered to secondary. Still too sweet.
1/7/17 The raspberry batch SG dropped to 1.010 but still tasted too sweet (other wise good!)
The main batch was about 1.018 and too sweet. (otherwise good) Made a 100 mL slurry of champagne yeast and added ca65 mL to the big batch and 35 mL to the raspberry batch.
2/24/17 tested the raspberry mead: SG = 1.004 Tastes good! Bottle time! CAP label M2
4/1/17 The main batch is stuck at 1.018. Taste is good. Bottled. 13.7% ABV cap label is M1 |
