Notes: 2.5 Gal of unpasteurized apple cider from a blend of apples (unknown) from local farmer's market. Truly fresh pressed, nothing added, may have natural bacteria. OG of cider was 1.056 @ 60F.
Added 7 oz turbinado sugar dissolved in 6 oz of boiled RO water to boost gravity to 1.064. Used 7/8 of a full packet of US-05 dry yeast. Did not re-hydrate. Splashed cider into fermenter (2.5 gal corny with spunding valve) to lightly oxygenate. |

Heat 2 gal to ~170 F add honey.
Add Remaining Water
5 tsp Yeast Nutrient (3 at pitch, 1 + 3 days, 1+ 6 days)
49oz Can Vintner's Harvest Sweet Cherry Puree. Add to Secondary and transfer mead into. Add Pectic enzyme. Secondary 2.5 months.
Target SG (w/ Cherry): 1.1 (13.18 % ABV)
12/16/18: Added 6 lb and 2 oz Sweet Cherry Puree (Vintner's Harvest)
3/23/19: bottled. FG=0.994 Actual ABV=cc%, 22, 22 oz bottle + 1 gal jug.

was aiming for a really light colored beer. wort was much darker than expected, although this could change in the end. but probably could have considered doing a late addition with some of the extract to maximize lightness / minimize caramelization or whatever it is that browns the malt during the boil....
update : it turned out pretty light and clear after it had settled a bit.
