Notes: My usual starter.
Chill and add yeast.
If in a hurry ferment for a day or two then add to brew.
Or if in less of a hurry, let it finish fermenting. Then place in fridge and let the yeast settle on the bottom. Pour off most of the liquid before shaking and adding the rest to brew.
Or for even more yeast, do as above, then add more starter wort and repeat the process. |

Notes: Simple and excellent beer. I have been working though a few batches and I always end up with too much yeast in the keg bottom. If you can, you should cold crash before kegging, if not, plan 4 weeks for fermenting, and transfer to secondary at week 3, or when the OG is pretty level.
I was told that this is typical for the K-97 yeast, you may want to use a different yeast that has quicker sedimation, I prefer to take the time. |

| Notes: Ferment mead to the highest alcohol content and feel free to add some super-high gravity yeast from white labs as well to try and top out at 20% or as close as possible. After finishing fermentation, split the batch into 2 separate buckets and place in freezer. Skim ice off of mead as it freezes to bring up the alcohol content. Hope is to get alcohol up to 25% or 30%. |

Notes: Apple cider fermented with two types of cherries and a Belgian wit yeast giving the cider a distinct apple pie flavor.
- Add 3.1 lb can of tart cherry puree to primary
- Check pH and add potassium metabisulfite as needed for a partial kill (for more information see chart: www.cider.org.uk/sulphite.html).
- Stock solution SO2: dissolve 3 grams of potassium metabisulphite in 30 ml (also grams) of water which corresponds to 50 ppm of SO2 for a six gallon batch
- Wait 24 to 48 hours before adding pectic enzyme and pitching yeast.
- Primary fermentation: 4-5 weeks @ 59°
- Add 5 crushed campden tablets dissolved in a bit of cider to carboy /keg before transferring for secondary/conditioning.
- Secondary: 8 weeks @ 60°- 65° (cellar temps)
- Transfer to a keg to condition: 6 months @ 60°- 65° (cellar temps) in pressurized keg |
