Notes: Based on meanbrews personal recipe. Adjust mash pH to 5.5. Using Citric/Malic/Tartaric because that's what I have on hand, so calc may be off -- start with like 3g and add more if needed. Allow fermentation to free rise from 70 degrees. Split into two kegs after primary, add strawberry juice to one half and keep keg cold to prevent referment.
Brewday: started with 9.5 gal, since I suspected that the 10.1 gal strike water recommended by BF was going to be more than my 12gal kettle could handle. Even at 9.5gal, still spilled over -- probably lost around half a gallon. Hit mash-in temp of 153 exactly. Only used 3g of acid blend to start, and glad I did because pH readings 10 min into mash were around 5.16 (did finally come up to 5.55). Temperature and hydrometer readings were really wonky throughout, I think because the grist was covering the entire bottom of the kettle and keeping heat and sugars trapped there. Kinda hate brewing with that bag...time to move on to something else for sure. Rinsed grains with 1qt of boiling water at end of the mash because I was concerned about gravity being low. I was right to be concerned -- even with the rinse, corrected pre-boil gravity was 1.033, at about 8.5 gal of volume. Boiled down to 8 gallons even to concentrate wort a bit before adding 60min hops. Realized that BF was accounting for the candi sugar in the mash, and that's throwing the SG off a bit, when the candi sugar won't be added until flameout. So probably corrected is more like 1.036-7, which is low but less absurd. I added an extra 1 oz of belgian candi sugar (so 6oz total) to again try to get back to a good gravity. Used whirlfloc (internet thinks it's fine for wit), clarityferm for gluten reduction, and put into fermenter at 70 degrees.
SG going into fermenter was 1.042. In addition to the problems mentioned above, I suspect that I just did not get a good enough stir inside the bag because the bag was so full and so cumbersome, and the boil kettle was also at capacity. This will be a very lightweight beer (oh well).
Results: Excellent beer, very clovey, a little sweet and quite malty. Probably the best I've made so far. Even the wife liked it.
Second brewday 10/18/24: My Saaz came in at 6.5% this time (woah!) so only using .65oz to get roughly the same IBUs. Have phosphoric this time for acid add. BF wants me to add 44mL, so I'll start with 30mL. |

Notes: 1) Treated water and got strike water up to 160 before mashing in. Mash was fairly straightforward but had to heat a couple times as mash sat around 152-154. I stirred 15 mins in and raised the heat to get up to 154 then let mash rest for the remaining mash time.
Mash PH: 5.7
2) Boil went as planned, added hops as recipe called for. I did make a last minute decision to add the 5 min boil hops, but pulled those out of what would've been all whirlpool. Thought it might impart a little more flavor.
3) With 5 mins left in boil, I added the corn sugar and boil hops then at end I immersion chilled to 160 and dropped the whirlpool for 30 mins.
4) I continued chilling which got to about 80F then transferred to the fermenter, moved to temp controlled ferm chamber to cool to 68F before pitching yeast.
OG: 1.064 - missed by .02 from recipe - I did measure this when the wort was still about 80 degrees and was filled with trub so not sure if that had an impact...
5) After temp was stable at 68F, I pitched the ballooned packet of activated yeast and shook the fermenter like hell. *Thanks amazon for not delivering my aeration kit today as you were supposed to...
6) 12 hours in and fermentation is going very strongly. I have a blow-off tube in a jug of sanitizer that is bubbling every 5 seconds. I'll continue to check ensuring their is no clogging from krausen.
7) Dropped Dry Hop as scheduled and pulled a samp!e at 7 days to check gravity. Its reading 1.010 which is off target. Beer tastes very good though. Checked again 2 days later and its still at 1.010 and even better aroma and taste with the second dry hop kicking in.
8) Lowered temp to 38 to cold crash for 2 days to prior to kegging.
9) Kegged with no issues and set carbonation to 2.3 vols. I sampled after 4 days and it's fantastic. Nice milky/pillowy mouthfeel, slight bitterness, and tastes like straight Orange juice.

For me it’s a DDH SMaSH as it’s quick and easy, and very drinkable.
Grist: 6.5kg Maris otter mashed at 67C
Hops: Whatever I’m experimenting with, but additions are at: 60mins - ~8 IBU 20mins - ~12 IBU Whirlpool 80C for 30mins - ~10 IBU 1st dry hop at high krausen - double the amount added during boil and whirlpool 2nd dry hop 3 days before bottling - three time’s the amount added during boil and whirlpool
