Notes:I have seen evidence of both Wyeast 1275 and 1968 being used by CCB, so take your pick. Dry hop for 14 days, bring temp down 10 deg each day until you reach 34 deg. The IBU's read a little high here but Wayne recommends using .5oz of both Ahtanum and Columbus for FWH. A slight variation on this would be to add Spanish Cedar to the secondary. Which ironically is neither spanish nor a cedar (South American/Mahogany). It comes as a spiral, Wayne recommends a 12-15 inch spiral for a 5gal batch.
This should be very close. The info here is taken straight from Wayne's interview posted above. Calculations are from the old hopville software.

Apocalyptic Sour adjusted to a smoothie sour.
This recipe can be adjusted for just about any puree for different fruit flavors.
Heat water to strike temperature and add grains. Steep for 60 minutes @ 152.
After 60 minutes, remove the grain bag and let it drain or set it in a bucket with a strainer and add the resulting liquid to the kettle.
Raise temperature to 170 gradually and hold for 10 minutes or so.
Bring wort to a boil, add lactose and hops, and boil for 30 minutes.
Ferment as normal. After active fermenation is complete, add 10 pounds of desired fruit* to FV.
*If you're using fresh fruit, prepare fruit my smashing and pasteurizing @ 170F for 10 minutes. This step is unnecessary if you're using puree or frozen fruit*
Sample beer every few days to check fruit flavor. Keg once desired flavor has been reached.

Notes: Can use altbier yeast (WLP 036) also, but Kölsch (Wyeast 2565 or WLP029) is more attenuative (or also a Belgian Abbey strain, or WLP 810 SF Lager). Could also add some oak cubes for a wood-aged version. Lager for 1-2 months.

Notes: Co-Pitched Goodbelly Lacto and Belle Saison at 70° and brought to 80 gradually over 5 days by adding 1° in the morning and 1° in the evening.
After 3 days a hop tea of 1oz Saaz and 1 oz EKG boiled in 2 cup of water for 10 minutes was then added for a small amount of hop flavor (we wanted the lacto to work for the first 3 days).
The fermenter was kept at 79-81 for 10 days after reaching the 80° mark and 5 gallons was kegged (leaving just hop matter, yeast and some juniper berries in the bottom along with a couple inches of cloudy beer.
4 oz of gin was added to the keg. This gin had been soaking for 2 weeks in an 8oz mason jar with a a few wine barrel stave chunks. This did not drastically change the flavor of 5 gallons of the beer but did add a small amount of gin/juniper flavor and overall complexity. |
