Kevin's stout brewing had one of the better stories of the day as our intrepid leader realized he had forgotten the Target hops slated for the recipe (1.5 oz). So with a little bit of scrounging Kevin secured an extra 2 ounces of Saaz hops from the Rhudes and proceed to make a Saaz hopped Milk Stout. |

SPECIFICATIONS
Original Gravity: 1.056
Final Gravity: 1.016
DIRECTIONS
Mash at 158°F (70°C) and hold for 90 minutes. Mash out at 168°F (76°C) for 15 minutes. Ferment at 50°F (10°C) until it reaches 50% attenuation then raise the temperature 4°F per day until you reach 65°F (18°C), then let it rest at this temperature for 3 to 5 days until beer is fully attenuated and clean. Carbonate with 30 psi for 3 days at 31-34°F (0-1°C).
Water: Reverse osmosis water with 0.68 tsp sodium bicarbonate, 1.75 tsp gypsum, 0.88 tsp calcium chloride, 0.44 tsp magnesium sulfate, and 0.33 tsp canning salt.
Primary Fermentation: 5 days at 50°F (10°C).
Secondary Fermentation: 7 days at 65°F (18°C). |

Now we're changing up the malt bill quite a bit; No cara malt and using 50% brownmalt together with 50% pale ale malt. The rest is identical and aiming for similar degrees of plato; 13°P. Expected color is very dark since we're using 50% of the roasted malt, however it is very lightly roasted, only about 65 Lovibond (Carafa ~400 and Chocolate ~300).
Mash Ph = 6.0 (higher than optimal 5.2-5.5)

Funny story about this... A buddy of mine loved this. Gave some to his father in law. HE loved it. So, my friend bought the ingredients and we brewed another batch. He gave it to his Father in Law for Christmas 2015. Father in Law decided he wanted to share some with business associates. In JAPAN. So, he carefully packed it over there. Went through an ordeal at customs and eventually got to share it with some Japanese business associates. Because of this event my brewery's slogan is:

Notes: IPA with wild hops used for everything but initial bittering (as we have no idea about the acid content in these, just that they're fresh and smell good).
Copying the mash schedule from our original IPA for this one. It includes a double infusion, 90 minute step mash done to make the beer more fermentable, drier and less sweet, which will allow the hops to shine through more.
MASH SCHEDULE:
-6.4 gallons @ 154.5 F to reach 144 F, hold for 30 minutes (beta sacch rest)
-Increase to 151 F and hold for 60 minutes (alpha sacch rest)
-Sparge @ 168 F to collect 3.5 gal
-Recirculate to collect 3 gal for 6.5 gal total
9/4/15: Brewing now. So far we have good efficiency, gravity looks solid and yield is right on.
10/17/15: Somehow this got pretty messed up during fermentation. We're probably just gonna dump it because we can't figure out what to do with it and it doesn't taste good/as planned at all. Our first wasted batch, but I'd say that's pretty solid considering we've been doing this for a couple years and have brought every other batch to fruition. Oh well. |
