Instructions
. First Mash:
Half of the grains whitout black malt in the pipe, make
the Sparge to reach 25 L for that 4l sparge warter.
. Second Mash:
Other half of the grains in the pipe with black malt in the last 40 minutes will prevent the extraction of hash tannins in your berr plus.4l sparge warter
My recipes are all elaborated for Speidel Braumeister 20L
The recipes clone are sometimes a little different from the original but are adjusted according to the final result.

Notes: Split batch using The Yeast Bay Vermont Ale and some Bells Yeast I harvested a while back out of some Bells Amber bottles.
The Bells yeast had a slightly acidic smell to it, but tasted OK, just cidery.

Notes:
Added one 5 ml HopShot of hop extract for bittering. Not much of a hot break.
Chilled to 18C, pumped in 45 seconds of pure oxygen, pitched 1 packet of (rehydrated 105 F water) S-04, and left at 17 C ambient to ferment.
6/15/12 Boosted temp to 18 C to ensure it finishes out. Looks a bit paler than expected.
6/23/12 Added 55g of crushed coffee beans (I used some strong Thailand import stuff) in a sanitized hop sock, not weighted. Racked to a flushed keg 22 hours later.

Use Cocoa/vodka infusion or Nibs soaked in vodka to to enhance chocolate flavor by adding to secondary. Consider Chocolate flavor extract for greater control.
Make infusion/extract of Vodka and chilis and use a few drops at a time prior to bottling to find the level of spice that appeals.
If you can find U.K. Phoenix hops add at 2 minutes to keep bitterness in check. If you have to substitute, use Willamette at 5 minutes.

You should freeze the raspberries in a plastic freezer bag, occasionally defrosting to help break apart the skin.
Brew the beer, throwing the Chocolate into the boil at the stated times. After a 7 day primary, rack into a 5g barrel for 28 days. I'm using a barrel for Seven Stills' Frambooze, which had a Framboise distilled into Whiskey. After the 28 days, rack onto the raspberries. Age to taste.
