Notes: Adapted from Dave Lines Brewing Beers Like Those You Buy (1978). The modification is dropping 500g invert sugar and replacing with Maris Otter Pale Malt.
My Grandparents kept a couple of Websters Houses in Halifax and Wakefield, UK. First pub, The Fleece on Gibbet Street was cask but their second pub was brand new state of the art 1970s model with keg beer which I got to sample around 1975ish. It compared well with other local offerings including Tetley's, Sam Smiths - largely down to Grandad Stan's skills as a cellar man - cleanliness and carbonation! Brewing this to see if it sparks any memories. |

Notes: Using Frankenyeast IV from Southern Hills Homebrew Supply, Roanoke VA. It is a massive mixure of old yeast reinvigorated in a huge starter and shipped.
For KY Common recipe, pulled from Reddit. Don't have Brewer's Gold or Azacca so swapping in Northern Brewer and Medusa. |

Notes: This recipe was taken from page 116 of Scotch Ale, by Greg Noonan. For good or ill I've made a few changes, such as the amount differences and the addition of the heather tips. For the original recipe, check out the book--its a great read.

| Notes: Brewed 4/26/15. Strike water was about 170/171F. Hit about 153F on the dough in and I recirculated about 1.5 gal to get it down to 152F. pH was 5.1 which is way lower than the predicted 5.5 in brew'n water. Not sure why that might be but the acid malt probably wasn't that necessary. Kettle efficiency is 81% which is a little lower than normal. Boil was pretty vigerous and I ended up with probably about 5.5gals in the fermenter. Could have slowed it or collected about 8.5gals in the kettle. Topped off with a little bit of water. Efficiency was pretty good and within normal range. Pitching temp was a little high about 71F so I pitched and cooled it down to 67F. 4/27 beer has been sitting at 67F with icing throughout the day. 4/28 temp has been about 67/68 all day. 4/29 temp had drifted up to about 69F so I let it stay there. Dry Hopped 5/8/15. Kegged 5/17/14. Ended up dry hopping for a bit longer than the planned 7 days. |

This recipe requires a temperature controlled fermentation environment as the process ramps and cools the ambient during the fermentation cycle.
Cycle is:
Fermentation - 2 weeks
Lager - 2 weeks
Bottle carb - 2 weeks
Cold cellar - 6 weeks
Set aside 8oz of sugar in the recipe for the dosage, use explained below.
Use a soft water profile.
Primary - Initial
Start at 68F and after lag phase hold for 2 days then ramp temperature 2 deg/day to 78F. This first phase of fermentation should take about a week.
Primary - Dosage
Reduce temp to 72F and add the dosage(1gram yeast nutrient + 8-12oz sugar dissolved in 160 deg water and held at temp for 15 min) to primary. This will start an additional fermentation and keep in primary for additional week. Total primary fermentation time should be around 2 weeks. Adding the dosage will dry out the beer which will get the yeast to an 88-90% attenuation which is important for the style. The recipe has the dosage included the fermetables for total OG value calculation.
Lager
Rack to secondary if desired. Lager at 48F moving to 34F for 2 weeks.
Bottle
Use bottles rated for 4 - 4.5 volumes of CO2. Prime for this CO2 level.
Add 1 packet of dry champagne yeast(or other yeast with a neutral profile) proofed for 30 minutes to batch along with priming sugar for bottling.
Hold at 75F for 2 weeks for carbonation.
Cellar cold for additional 4-6 weeks to mature.
