Add lactose at flame out
Add coffee beans roughly crushed to keg or secondary. Coffee must be added to cold beer. You are basically cold brewing the coffee in the beer. Sample beer for desired coffee flavor in 24 hours. Remove beans when beer reaches your desired flavor. Make sure to sample as often as possible after 24 hours. Coffee flavors can quickly get out of hand and be overpowering, if left in for too long. For me the sweet spot has always been just under 36 hours, but some people like less coffee flavor, so make your own call here. |

Notes: 0 min boil hop = Post Boil Swirl Hops.
Mash at 150F. Kill the flame after the 90 min boil and add the Post Boil hops, swirl, cover and let sit for 60 min. After 60 min, drop the temp quickly, pitch and ferment at 66F for 14-17 days. Cold crash to 35F before racking to secondary. Rack to secondary, let the beer warm back to pitching temperature, and dry hop. Add the corn sugar to a cup of water and boil for 5 minutes, chill and pitch when ready to bottle. Bottle at 66F. |

| Notes: This is a pre prohibition beer from the Gerst brewing company that did not survive prohibition. It has been resurrected by the Yazoo brewing company in Nashville TN. Not 100% sure about the yeast Yazoo uses their own house yeast that is an English ale but other than hat a well guarded secret. |

| Notes: Prepare a 2L yeast starter. Single infusion mash at 154°F., using 1.5 qts water per pound of grain. Sparge to collect 7 gallons of wort. Add hops at beginning of 60-minute boil. Add orange peel and coriander in last 10 minutes of boil. Chill wort, pitch yeast starter, and ferment at 65°F. for one week, then transfer to secondary for two weeks. Bottle with priming sugar and condition for two weeks. Optional: serve with a slice of orange. |

***Tasting***
I (and everyone else) preferred the brown sugar to the stevia. Aroma was less than desirable. Extract to correct aroma? Next time back sweeten with concentrate. |

Ale Yeast.
The key to making a great clone is using roasted unmalted barley (or black barley) with a color rating around 500 °L. Do not use roasted barley (300 °L), roasted malt (500 °L) or black patent malt (500 °L).
To get that "Guinness tang," try this. After pitching the yeast to your stout, siphon 19 oz. of pitched wort to a sanitized 22 oz. bottle. Pitch bottle with a small amount of Brettanomyces and Lactobacillus. Cover bottle with aluminum foil and let ferment. When beer in bottle is done fermenting, pour it in a saucepan and heat to 160 °F (71 °C) for 15 minutes. Cool the beer and pour and pour it back in the bottle. Cap bottle and refrigerate. Add to stout when bottling or kegging. |
