Notes: Mill the grains and mash at 154°F (68°C) for 45 minutes. Recirculate until your runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, adding hops according to the schedule. After the boil, do a whirlpool step: Stir or recirculate to create a vortex; add whirlpool hops when the wort temperature has dropped to about 195°F (91°C) and steep for 20 minutes. Chill the wort to about 66°F (19°C), aerate, and pitch the yeast. Ferment at 68°F (20°C). When fermentation is complete, crash, package, and carbonate to about 2.6 volumes of CO2.
BREWER’S NOTES
Water: If you use Bru’n Water, use the Brown Full water profile. At Wild Fields, we use a blend of carbon-filtered city water (high in bicarbonate) and reverse-osmosis (RO) water. We add a small amount of gypsum and calcium chloride to the mash.
Mash: We target a thickness of 1.2 quarts/pound (2.5 liters/kilo).
pH: Our target mash pH for this beer is 5.4, with a target knockout pH of 5.3.
Clarity: We use kettle finings toward the end of the boil and Biofine before packaging. |

Snow Goose from the Wild Goose Brewing Co. on Maryland’s Eastern Shore is one of my all-time favorites. This annual winter treat always finds me stashing away plenty for summer. However, no more stashing is required as evidenced below! If I owned a brewpub, this would be my house beer.

Ingredients:
10 lbs. pale ale malt
1 lb. crystal malt, 60° Lovibond
0.25 lb. chocolate malt
0.25 lb. roasted barley
1 lb. malted wheat
1.5 oz. Cascade hops (6% alpha acid), 1 oz. for 60 min., 0.5 oz. for dryhopping
1 oz. Fuggle hops (6% alpha acid), 0.5 oz. for 45 min., 0.5 oz. for 30 min.
1 oz. Goldings hops (5% alpha acid), to steep
Wyeast 1318 (London Ale III)
Step by Step
Add grains to 4 gal. of water at 168° F for mash temperature of 154° F. Sparge and collect 6 gal. wort. Boil 15 min., then add 1 oz. Cascade. Boil 15 min. more, then add 0.5 oz. Fuggles. Boil 15 min. more, then add another 0.5 oz. Fuggles. Boil for 30 min. more for a total boil of 75 min. Turn off heat and steep 1 oz. Goldings hops for 10-20 min. Chill, aerate, and pitch yeast.
Ferment in primary at 64°-74° F for four to eight days and rack to secondary for seven to 10 days. Bottle or keg as usual. |

*Dough in to start the mash at 52°C
*Leave for 10 minutes
*Remove approximately 30% of the mash and put in a large saucepan
*Add 30g of Styrian Golding hops
*Heat to 60°C and hold for 1-2 minutes
*Bring to a boil and leave for 20 minutes
*Return the boiled decoction to the main mash and stir
*Mash temp should now be 63°C (approx)
*Leave for 45 minutes
*Sparge with near boiling water (95°C)to collect 27lts in the boiler
*Adjust wort pH in the boiler using 80% Lactic Acid, before heating, to a pH of 4.4
*Heat until bubbles appear
*Chill to 20°C
*Pitch yeast and house culture

The idea of brewing this again is due to the fact I won second place with the previous incarnation. I now need to see if I can produce the same or a very similar beer.
The house blend has been added to so I am pretty sure that the profile of the final beer will change even though I am doing everything to do with malt, hops and brewing yeast the same as before.
