Mill the grains and mix with 3 gallons (11.2 l) of 163°F (73°C) strike water to reach a mash temperature of 152°F (67°C). Hold this temperature for 60 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains with 4.3 gallons (16.2 l) and top up as necessary to obtain 6 gallons (23 l) of wort. Boil for 60 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 60°F (16°C). Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 60°F (16°C) for one week, then allow temperature to free rise to 70°F (21°C). Upon completion of fermentation, add dry hops and wait 2–3 days. Crash the beer to 35°F (2°C), then bottle or keg and carbonate to approximately 2.5 volumes of CO2.

Build a BIG, oxygenated 3 liter starter from 10.7 oz of DME and 3 liters of water. Oxygenate and use Wyeast Yeast Nutrient.
Add the oats a bit later in the mash and mix into the top layer of the mash to avoid all the oat stickiness on the bottom of the mash tun. Potentially use some rice hulls too.
Pitch at 63 and ferment at 63-64.
Initial pre-boil OG should be around 1.080. Add any DME necessary to get to that number, possibly 1-2 lbs. Boil for 3-4 hours until the OG reaches 1.124. FG should be around 1.048 for a 10.0% ABV beer.

Adjusting for 8g/l dry hop saturation point as mentioned in http://brulosophy.com/2019/06/24/investigating-the-dry-hop-saturation-point-exbeeriment-results/
Including the hop stand/whirlpool as a "dry hop" the budget for post boil hops is 8g*14l=112g hops. I stuffed up my calculations a bit so the majority of the dry hop quota went into the high krausen addition leaving only a little bit for the final dry hop but should be fine. I usually use 240g so its a good test.
I've also added a small amount of Warrior hops to see if it gives a little bit of a bitterness backbone underneath the hops that just come out of the hops during whirlpool/dry hopping |
