Notes: This batch to be brewed by Brew In A Bag (BIAB) method. After flameout allow ~20 minutes for a hop stand while stirring the kettle for whirlpool.
After a few BIAB brews I learned that the method causes low fermentability issues due to the thin mash. Since this brew I have added a oxygenation system to my brew gear to ensure quick, strong, fermentation. I also dialed in the temperature controller on my fermentation chamber.
This brew turned out good, very bitter in a good way, but would improve by using the traditional mash and sparge method and by reducing the amount of dry hops to help with clarity. |

Add yeast nutrients at different steps. From Northern Brewer:
Anyone who has ever stirred a fermenting beverage knows the foaming, triggered by the release of CO2, can make one heck of a mess! To help minimize this, you should mix the nutrient blend into ½ cup of must and add it back to the fermenter. Then begin to slowly stir the must to release the main portion of the CO2 gas. After the foaming has subsided you can begin to stir more vigorously. Mix the must well enough to introduce plenty of oxygen into the fermenting must. Oxygen is needed by the yeast throughout the growth phase. Oxidation is not a huge concern until you get past 50 percent sugar depletion.

From Fifth Season Gardening: Fining with Gelatin: (per 5 gallons of beer)
Add ¼ to ½ cup of cold filtered water to a sanitized measuring cup
Add ½ teaspoon of gelatin on surface
Let sit for 10-15 minutes to partially dissolve
Heat water to 150-155 °F (I usually do small 5-10 bursts in the microwave. You may also heat the water by adding very small increments of boiled water) DO NOT BOIL THE WATER, you will make Jell-O instead.
Stir and test temp with sanitized thermometer
Pour into fermenter or keg. Use care in avoiding unnecessary cold side oxidation.
Allow 24-48 hours to work its magic prior to packaging or serving.

Add first wort hops & boil for 90min
Drop temp to 60F & pitch yeast. allow to ramp up to 72
3wks in primary, cold crash & add vanilla tincture
[Toasted Flaked Oats]
toast at 350F stirring at 20min increments until golden brown (~1hr. varies on how thick the grain layer is in pan)

**NOTE: This is how I prepared for this batch. I have also used pure extract and boil in wort methods**
Split and chop 6 beans into 1" segments
Place in 8oz canning jar with 4oz of neutral spirits (I used Most Wanted Vodka)
Shake vigorously until seeds are dislodged
Fill sauce pan with luke-warm water with wash cloth on bottom (Water Bath Canning)
Place canning jar in water on the washcloth and wait 5 min
Bring water, jar and washcloth to boil
At roiling boil, time for 15min
Remove from heat
Remove canning jar from water bath and allow to cool
Verify seal and remove canning band
Shake as wanted until use
Extraction
place hop bag or cheese cloth over jar
fix in place with canning band
pour into vessel |

200g de houblon réutilisé (probablement oxydé) du dry hop de kombucha Mangue Orange Houblonné + jus d'orange + citron séché, etc qui vient avec.
Tout ça ajouté au mash.
Mash prolongé de 20 minutes à cause de visite.
Bon - crissement trop de moût... 24-25L probablement en plus des 2 litres de jus d'orange et purée de mangue (fuck)
OG: 1.048 - Gravité et volume fermenteur ajustée en considérant l'ajout du jus d'orange boîte (2L)
Amertume très présente - probablement autour de 50 IBU.
