Notes: Experimental continually hopped imperial triple IPA... fantastic - big, complex, more like a barlywine. A pain to brew though with all the hop additions...!
3 oz mixed Chinook + Citra 60-35 min, 4 oz mixed Simcoe + Columbus 30-15 mins, 4 oz Chinook, Citra, Simcoe, + Columbus 10-5 mins.
Added DME, Sugar, Irish moss, Yeast nutrient all at 15 mins before the end of the boil.
Whirlpooled 15 mins total, 10 hot then 5 after immersion chiller.
1 oz citra, 1/2 oz simcoe, 1/4 oz amarillo whole cones to keg. |

Notes: This what happens Larry.
Mash at 153F for 60 min. 90 minute boil. 0 Minute boil hops get added at flameout and stand for 45 min covered. Pitch and ferment at 72F and raise to 76F in the first 2 days. When primary fermentation is completed, let sit at room temp for a total fermentation time of a month to let the brett develop. Cold crash to 38F when fermentation is complete. Rack or push to CO2 purged dry hop vessel, bring back to room temp and add dry hops for 3 days. Rack to CO2 purged keg and force carb at 38F. Serve at 12psi and 44F.

Notes: My attempt at a Small IPA. . .w00t.
Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 180F. 90 minute boil. 0 Minute boild hops get added at flameout. 0 min Aroma hops get added at 175F during the chilling. Pitch and ferment 68F-72F (basically room temp). Primary for a total of 14 days so that everything clears up nicely, cold crash for 2 days at or below 40F, then rack to secondary and bring back to ferm temps. Add first dry hop, 2 days later add second dry hop and filter and bottle at the end of day 4. Bottle and condition for 21 days at 70F. |

I have based this recipe upon the original Hoegaarden clone I did a few years ago.
I have upped the Coriander seeds and the oranges so we shall see how this turns out.
It should go down well at the wedding, who doesn't like a wheat beer!?!?! |

Notes: Forbidden Black Rice (Lotus Foods - Item #10270S) - Rice used unmilled. Clean with cool (room temp) water. Bring 36 gallons of water to boil and transfer to Mash Tun with Black Rice and let sit sealed for 60 mins. Begin adding remaining Strike water at appropriate temp to reduce mash temp to less than 149 degrees (Amylo 300 max active temp) and a pH range of 5.4 (min) to 5.6 (max). 145 - 147 degrees recommended. Begin incorporating remaining grain bill once strike temp is within range. (Added Amylo 300 for full 60 min Mash rest).
Note 1: Our Mash temp finished at 148.6 degrees and reduced to 146 degrees over the hour Mash sach rest. PH was tested and range was 5.46 pH.
Note 2: Strike water for rice infused water reduced to approx 188 degrees over 60 mins. Added 30 galls of 130 degree water and 30 gals of 150 degree water to reach 148 degree water for final mash temp.
Note 3: Amylo 300 added at 300 ml rate at start of Mash, and reached 10.4 degrees Plato (post boil test was 11 and Ferm check was 10.4). Unknown if higher Amylo 300 pitch rate would secure higher ABV, but dryness may be a factor (brut style beer?)
Note 4: Rice Conversion - 88 lbs of rice; manufacturer calls for 1.75 cups of water per 1 cup of rice or 23 gallons of water for (88 lbs) of rice. Allowing for additional apporox 27 gallons to lower viscosity and fill mash tun void (approx 10 gals in our brew vessel)

Notes: Mashing Instructions:
Added honey and tangerine juice to 2 gallons of filtered tap water, heated to 145F and held for 20 minutes to pasturize.
Ran off into fermenter, topped up with more filtered tap water to make 4 gallon target volume. Chilled with immersion chiller to yeast pitching temperature, pitched yeast starter, oxygenated for 2 minutes and let it roll.
Special Instructions / Notes:
The must measured 27.7 brix on my refractometer before I pitched the yeast.
Will rack to secondary this weekend and then ignore it in my garage for at least 6 months.
Update Nov. 19, 2014. Bottled from secondary today. Whilst it sat in secondary, the gravity dropped to 1.008. It is pretty clear without any fining, so I won't bother. This is a bit less residual sugar than I had hoped for, but a lesson for next time - USE MORE HONEY! See you at the next mead tasting in 2015 and you can taste it then. |

Notes: Perfect cream ale! Flavorful with a hint of sweet malt from the pilsner malt, but crisp and light in flavor and mouthfeel.
The actual FG was 1.010, for an ABV of 5.2%.
