Starting Volume H2O: 5 gal (5 gal reserve)
Equipment: 2 - 10 gal mash tuns w/lid and temp guage, 1- 10 gal brew pot, Gas Stove, SS ladle, ss tongs, 250 ml graduated cylinder, hydrometer, 40 ml baster (for small volume liquid transfer), 6.5 gal glass big mouth carboy (primary fermentor, 3 -6 gal carboy container, , blow off valve, stem thermometer / hydrometer

Set-up Notes: Kitchen Gas Stove Burner. Much easier to heat and control temperature using gas burner.
Mash: Targeted 60 min steep. Water temp held steady between 148-150 F for 60 minutes while recirculating wort. Fly sparged additional 15 min at 160 degrees using the reserve 5 gal water. Transfered wort to brew kettle and put back on burner to heat for boil.
Grain Density (Post Mash): 0.02 oz/ml (~30% increase in density)
SG: > 1.05
Absorbed liquid: 0.96 gal (estimated based on density increase)
Boil: Very easy and quick to get to temp with burner and maintain. Stirred in hops just before the break to ensure even heat distribution. 60 minutes for boil. Added aroma hopps at 45 minutes and stirred.
Cooling: Took ~10 minutes using Brinkman counterflow wort chiller to cool down to 68 F.
Wort:
SG: 1.072
Yield: 6.0
Added yeast starter and sealed fermenter. Set up blow off valve.
OG:
Yield: 5.0 gal (Did not get down close to trub
Let sit for 7 days in primary fermenter. Tranferred to secondary for 7 days
FG: 1.012
Attenuation was 76%. I Target FG was 1.0 with 75% attenuation.

Conditioned at 20lb psi co2 for 4 days |

Notes: This recipe is designed to emphasize fruit and citrus aromas and flavors in the IPA by using hops with these attributes, including Galaxy.
A 2016 article by Ray Found in the website brulosophy.com (http://brulosophy.com/) reported that a 20 minute hop boil achieved the same results as a 20 minute hop stand. Taste tests revealed virtually no difference between boil and hop stand additions. Accordingly, I have opted to eliminate boiling in lieu of a hop stand.
The amount used for dry hopping is based on an article in Zymurgy magazine (Vol 43, No. 2, March/April 2020, pages 34-41) which reported an Oregon State University study found that dry hopping with more than 8 grams per liter (5.4 oz. per 5 gallon batch) produced a herbal and tea like aroma with no citrus qualities. The study suggested that using 4-8 grams per liter (2.7 to 5.4 oz. per 5 gallon batch) was sufficient to maximize the desired citrus aroma. Accordingly, 5 oz. was used for this recipe

Notes: Attempt at a simple American brown ale
4.5 gallons strike water added at 169 degrees, grain added, resting temp 155. Steeped grain for 75 minutes. Sparged to approx 6.5 gallons. Boiled for 70 minutes. Brief boil over at start. I noticed that not nearly enough wort had boiled off by 30 min and decided to crank up the heat and boil for another 10 min. Brown sugar added 10 min prior to flame out. Cooled with wort chiller.
Bottling Day, the beer smelled delicious and slightly boozy I boiled down the wort a bit longer and ended up with a slightly higher OG of about 1.072 however my FG was spot on at 1.016 giving me an ABV of 7.35% |
