Notes: To make invert #1 sugar, combine 2 parts sugar and 1 part water (eg. 670g sugar and 330ml water) and heat to 100 °C for 15 mins. Then add c. 1/4 tspn citric acid and heat to 114°C for 5 mins. Allow to cool before transferring to jars. to make Invert Sugar #3, bake in an air fryer on the "Bake" setting, if you have one, at 150°C for 1.5 hours. Alternatively, use pale Invert Syrup (available on Amazon) and bake for the same duration. If neither option is feasible, substitute with dextrose brewing sugar, or golden syrup and possibly add a few millilitres of Colour Carmel (E150c or d) if that's convenient. Check the baking section of your supermarket or buy a little Murphy & Sons Carmel colour if you plan to make a lot.
The brewer's caramel is Murphy & Sons Brewer's Carmel, not anything to do with Belgian Syrup. |

Notes: 205 degree whirlpool is really flameout. Have it listed as 205 degree whirlpool to get the software to calculate IBUs from the addition.
Solid beer, but needs a bit more character in our opinion. The hops didn’t come through as anticipated. Recommend increasing hops by 10% or so to get a little more character out of it. The Mandarina Bavaria mainly is what I feel it’s missing. |

Use a two-step mash with a protein rest at 122°F (50°C) for 25 minutes, followed by a main rest at 152°F (67°C) for 90 minutes.
Pitch yeast at 62°F (17°C), hold at that temperature for 24 hours, then drop to 50°F (10°C) and hold for 20 days. When fermentation is complete, raise temperature to 65°F (18°C) for a two-day diacetyl rest, then drop to lagering temperatures for one month or more. we |
