Notes: **This recipe is still in development; looking to create a smokier and hoppier than usual Wee Heavy, which would probably not match any style guidelines, but then, they are merely guidelines after all.
Soak oak spiral in Lagavulin 16 for 1 week, add to secondary 20-30 days. Yes, I know that the L16 is not a Highland scotch, but "Islay Hop Scotch" just doesn't have the same ring now, does it?
Using Simpson's DRC in place of Crystal 120
Brew Day Notes:
1) So, no Roasted Barley even tho inventory says I have it, subbed .45 lbs UK Chocolate for the .25 Roasted Barley
2) Also no Challenger hops so subbed .5 oz Warrior for 1 oz Challenger at first wort
3) Pitched 2 smack packs Wyeast 1728 directly @ 65*
Bottling day (08/14/18) tasting note: Scotch soaked oak spiral is da bomb! Nice spicy oak and scotch notes that don't overpower the malt. Would probably not change recipe back to original, pending final tasting...

Notes: Target: A higher alcohol American Pale Ale with a refreshing citrus kick. Citra hops for bittering / flavor, Cascade for Aroma, and dry hopped with Motueka for to strike the balance between citrus and bitter. Very simple grain profile with 5% Carapils for added body and head retention.
