Notes: Conditioned grain for a couple of hours and milled night before. Not sure of crush - gap may be too large (let's see).
Sun 10 April 2022 mash in 6:45 am. Capped with carafa at start of mash out, under top plate. Added pack of coopers yeast nutrient to boil.
1 hour boil, from 31 litres to 26.5 litres after cooling. 11 am into fermenter at 24C, 12.5 brix=1.048. 10:00 am made 250ml vitality starter of Diamond. Hydrated 1 pack of w34/70 7:45pm. Out of oxygen. pitched yeast 8pm, 14C. Mon am 10C. Tues pm upped to 10.5, Weds am to 11C. Weds 13th am no sign of fermentation, added extra w34/70 dry. 7 pm signs of Krausen.
Left for Easter weekend at 11C, Monday 4 pm 8.5 brix= 1.023, upped controller to 13C. Tues am 8 brix=1.021, upped tp 13.5C, pm 7.75 brix upped to 15C, Weds am 7 brix=1.014, Weds pm 7 brix. Fri 7:15 am downed ctrller to 10C. Sat into keezer @2C. Packaged Sun 1 May keg plus 6 litres in bottles. A very subtle richness - nice but voyager/crisp munich too light. |

Notes: No Sparge Method used. After 10 minutes of the 162* rest, strained thick decoction mash into side kettle and brought to boil. Ensured main mash stayed at 162* after grain removal. This is an Export-Strength Helles like Augustiner Edelstoff. Seems to fair better in competition than previous batches at lower abv's. Delicious!

Notes: Before adding pumpkin to boil in a biab, spread thinly on cookie sheets and lightly sprinkle with cinnamon, nutmeg, cloves, brown sugar and a small amount of grated ginger and coriander. Bake for 1 hour at 350 to carmalize slightly. Add to wort before boil.
Scrape out vanilla beans and make a tincture with 1 oz vodka, add to bottling bucket. |

Recette d'une India Pale Ale classique de profil anglais au houblon East Kent Golding et à la levure T-58. On peut remplacer la levure par la S-04 pour un profil épicé plus neutre ou bien encore la US-05 qui développera plus d'esters et fera ressortir les aromes du houblon. L'amertume et l'alcool sont relativement élevés comme le veut la tradition de ce style de bière. On peut également subtiliser le houblon par un autre aux propriétés aromatiques intéressantes (ex : cascade, citra, amarillo,...) et adapter les quantité en fonction de l'amertume souhaitée et mettre plus de houblon en aromatique (en fin d'ébullition). |

American Pale 2-Row - Bulk Maltose.

Flaked Oats - Up to 30%, Mouthfeel of Cream
Roasted Barley - Low %, Color and Dry Stout Flavors.
Mashed Sweet Cherries - 5oz of cherry syrup. Buy 5 lbs of frozen cherries in 1 lb quantities. Toss the cherries in 1 cup of sugar per lb of cherries. Place the cherries and sugar in a sauce pot with water up to covering the cherries. On medium heat, bring to a simmer. Mash the cherries regularly as the mixture simmers. The sauce will be complete when the cherries reduce to a simple syrup. Toss in secondary at bottling, as the yeast will quickly and readily eat through the cherry syrup.
Lactose should be added in a 5 oz bag quantity. Boil water with lactose added for 15 minutes. Toss into beer after boiling at bottling so as not to rack out of beer.
Place 2 bags of shredded coconut onto a baking sheet well spread out. Bring oven to bake at 350 F. Place coconut on middle rack and let sit for 15 minutes or until they start to yellow. Turn the coconut over and let yellow again for 15 minutes. Bring the oven to a broil, and place coconut on high rack and let crisp to darker brown (~5 minutes). Flip coconut and crisp again for ~2 minutes. Place in a cheese-cloth bag, and place in beer for 3-5 days. Note: it sat initially for 4 days, but a single day more would have made it more present in the nose.
Cocoa Nibs: Add to secondary after 5 minutes of boiling in clean water. Let sit in secondary for 3-5 days. Note: nibs were left in beer for 5 days. |
