Notes: Step 1: Prepare Blood Orange Tea
6 large blood oranges (8 if they are on the small side)
1. Boil 2 litres of water and cool to 76c.
2. While water is cooling, zest 6 blood oranges (or 8 if you are using the smaller ones)
3. Once they have been zested, cut the oranges in half and place into a muslin bag.
4. Place blood orange zest and halves in the 76c deg water. Steep for entire duration or boil (basically just leave it and forget about it!)

Pitched Wyeast 1318 London Ale III Slurry (5 G), and WLP025 Southwold (10 G)
Was done as a concentrated boil (13 Gallons) and diluted to strength.
Plan is currently that we will secondary the beers on top of oak for 3 weeks. The 1318 Batch by Rich will be racked onto French Oak Beans soaked in Scotch Ruby Port and Vodka. The WLP025 Batch by Drew will be racked onto Oregon Oak Beans soaked in Sherry and Vodka. The soaking process protects against infection and adds character to the beer. |

Notes: Ran off 7 gallons into boil, ended up with approximately 5.5 gallons of wort. Don't think I got as much wort as possible since rye seemed to clog mash tun a bit. Boil off was not as much as estimated by the calculator.
Only 2 gallons from first runnings, 5 from second.
All water used was spring water from Food Lion.
Actual OG 10.056, 2 packs of rehydrated yeast pitched at around 67 degrees, stirred for 5 minutes. |

Notes: cal strain took beer to 3 plato =1.012 SG, perfect fermentation! comming in at a nice 5.66% alcohol with 76% attenuation.
english ale went to 4.2 plato = ~1.016, great fermentation as well! A slightly less attenuative yeast comming in at a cool 5.25% alcohol 70% attenuation
Added hops 6 min into a 10 min whirlpool. did not laughter slow enough, and i collected 30L of 1.04 wort, i wanted to boil it down to 1.060 in 20 L but i left the lid on for 30 min while i went to walk muppet and jacked that idea up. anyway , i hope it is not watery.
kegged red ale # 2 on 12/11/16 and FG is 3.3 P, better attenuation than expected, final ABV is 5.49 |
