Cooled down to 65 and transferred to fermenter
OG = 1.048
Pitched one smack pack of Wyeast California Lager yeast direct from pack after 4 hours of activation
Moved fermenter to basement where ambient ~59F
Took about two days for apparent fermentation to start (good kraussen at this point)
Brought temperature up to 61/62 for a week
Final gravity (read 04/15) 1.012
Slowly brought temperature in room up to 68F down to 65F for two days |

Recette d'une India Pale Ale classique de profil anglais au houblon East Kent Golding et à la levure T-58. On peut remplacer la levure par la S-04 pour un profil épicé plus neutre ou bien encore la US-05 qui développera plus d'esters et fera ressortir les aromes du houblon. L'amertume et l'alcool sont relativement élevés comme le veut la tradition de ce style de bière. On peut également subtiliser le houblon par un autre aux propriétés aromatiques intéressantes (ex : cascade, citra, amarillo,...) et adapter les quantité en fonction de l'amertume souhaitée et mettre plus de houblon en aromatique (en fin d'ébullition). |

Notes: Roast oats in oven for @ 300F for 15 min before mash.
Cover cacao nibs in water, soak at 160F for 15 min before adding to secondary.
This is a double bath recipe, split into two carboys. Had to use a thicker mash based on constraints of the size of my mash tun.
Made two starters.
Carboy #1, in secondary: 4 oz cacao + 5 lbs frozen tart cherries
Carboy #2, in secondary: 4 oz cacao; 16 oz cold brewed coffee at kegging
Based on BYO style guide, but additions at secondary are my own. |

Drop PH with lactic acid to 4.5. Pitch <300 billion cells Lactobacillus P. (30 capsules of Swansons Probiotics) at 30C and leave for 24 hours in fermentor.
To be followed after 24 hours with Voss Kviek (not Hothead as stated above) co-pitched with Brett Amalgamation.
Dry-hopped 21/02/2017 with First Gold.
On tap 9th March 2017: Tripical fruit aroma. Zesty citrus, orange peel, lemony, passionfruit, guava. Sour. Brett fruitiness and mouthfeel. Good head retention.
Mara: Aroma - cooked strawberries, jam. Tropical fruit + sourness = peaches. |
