Notes: For Brewzilla 35 liter with continuous recirculation.
Water: 8 gal in kettle, add chemicals, at first strike temp (~112F) drain off 1.75 gal for later sparge. Sparge with 1.75 gal or more to get 6.75 gal pre-boil.
Cool to 64F, add 45 sec of Oxygen or 5 min of air, then slight underpitch to encourage esters at same temperature. While Labs WLP300 or alternative Wyeast 3068. Near end of fermentation, increase temperature to 72 F and hold 3 to 5 days. Keg without a cold crash.
Carbonate to 4 vols, fairly fizzy. |

Hop Stand Cons
The 190–212 °F (88–100 °C) range will allow essential oils with higher flashpoints an easier time to solubulize into the wort and also will allow some alpha acid isomerization to occur with the best estimates of between 5–15% utilization. Some homebrewers will keep their kettle burner on low to keep the temperature of the wort elevated above 200 °F (93 °C) during their extended hop stands which would better emulate the conditions in commercial whirlpools. A hop stand in the 160–170 °F (71–77 °C) range will basically shut down the alpha acid isomerization reaction and the lower temperatures will reduce the vaporization of the essential oils. Homebrewers can use their wort chillers to bring the wort down to this range before adding the knockout hops or they can add a second dose of knockout hops |

| Notes: you may notice that this IPA is on the lower end of the bitterness range for the style. There's a reason for this. As we all know, hops bitterness fades with time. The original IPA was brewed at a higher alcohol level and higher bitterness than a Pale Ale. It was then put into casks along with more hops and shipped to India. That was a 5-7 month long voyage and during that time the dry hopping added aroma and flavor and helped preserve the beer, but it didn't add bitterness. In fact the bitterness level dropped during that crossing. Since We don't tend to let our beers age 5-7 months before drinking them, I designed this to have a lower bitterness than just about all other IPA beers on the market. This recipe produces a beer that is higher in alcohol, balanced in bitterness and very hoppy in aroma and flavor. This is my idea of what an IPA would have been like when delivered to India. I know I enjoy it as do my friends (some are serious IPA snobs too) and I think you will too. |
