Need a brett/lacto blend to make "tang"
Mash pale grains, cap sparge with roasted barley
To get that “Guinness tang,” try this. After pitching the yeast to your stout, siphon 19 oz. of pitched wort to a sanitized 22 oz. bottle. Pitch bottle with a small amount of Brettanomyces and Lactobacillus. Cover bottle with aluminum foil and let ferment. When beer in bottle is done fermenting, pour it in a saucepan and heat to 160 °F (71 °C) for 15 minutes. Cool the beer and pour and pour it back in the bottle. Cap bottle and refrigerate. Add to stout when bottling or kegging. |

| Notes: Pitch yeast at 53 degrees. Ferment at 53 degrees for 2 weeks. Soak the 4oz of cocoa nibs in vodka while in the primary stage . Then transfer into secondary and add the 4oz of cocoa nibs to the fermenter. Ferment at 53 degrees for 3 months. Cold crash for the last week near 32 degrees. After racking into the keg add the bottle of Hershey's chocolate syrup. |

Very clean and thin body. Good citrusy smell. Lemon and candy fruit taste.
Next time mash higher, me thinks.
Update: 4/30 - Got Runner up BOS at local tasting. Lots of compliments and perfect for summer. Easy drinking and very little alcohol warmth for such a high ABV beer.
Personally, I doubt I will make it again. Decided the nondescript sweet nature of mosaic is not my thing haha. Azacca seems lost in the mix. Decent fruity nose and taste, just nothing pops in my mind.
Also planning on retiring Warrior from my bittering selection. Find it much harsher than Magnum, even when used as a FWH. |
