Notes: This beer almost meets the BJCP requirements to be called an Irish Red Ale. The disqualifying factor is the ABV of 6%. An Irish Red Ale is characterized by an ABV of 3.8-5%
This beer is on the sweeter, more caramel noted side of Irish Reds. Hops bitterness meets the minimum requirements at 18% with forward floral and herbaceous notes, and spicy earthy background aromas. Minimal heavily roasted malts (in this case chocolate) were used to increase drinkability and soften any roasted, dry biscuit, toasty notes. Head should be persistent and aggressive.
Be EXACT with the grain weights or the SRM will be drastically altered.
Cell count of pitch must be between 3-4x as much as a single packet.
Best served in a Thistle Glass (as shown in picture) - also known as a Scottish Ale Glass. The thistle glass is a variation of the tulip glass designed specifically to look like a thistle. The glass is relatively tall, often holding between 15 and 20 ounces making it slightly larger than your average tulip. It features a long stem, pronounced bowl (or bulb), and is topped with flaring sides. The design is specifically meant to resemble Scotland’s national floral emblem which provides a pretty direct clue towards its usage. |

Add 4.5 gallons of water and mash at 151°F for 60 minutes.
While mashing, add 5 gallons of water to your hot liquor tank and bring to 185 degrees farenheit.
Mash out after one hour at 170°F, and wash grain using either a batch or fly sparge, however your system is set up.
You should end with around 7.25 gallons of wort in your kettle. Boil for 80 minutes, following listed hop additions, and if using an immersion chiller, don't forget to put it in your boil with 15 minutes left for sterilization, right after you add your chosen clarifier.
You should transfer 5.5 gallons of cooled wort into your fermentor to account for fermentation losses, so don't forget to calculate your system losses and boil off volume into the given volumes.
Ferment for 14 days, and either rack to secondary and add dry hop additions, or dry hop from day 10 to day 15 in primary and crash chill.
Add 4 oz of Dextrose and bottle, or rack to your keg, force carbonate and enjoy!

21A – American IPA
A decidedly hoppy and bitter, moderately strong American pale ale, showcasing modern American or New World hop varieties. The balance is hop-forward, with with a clean fermentation profle, dryish finish, and clean, supporting malt allowing a creative range of hop character to shine through.

Notes: This recipe calls for a total of 3 lbs of fresh blueberries. Wash them thoroughly beforehand.
While the wort is boiling, put the blueberries in a large pot with some water and bring to a gentle boil. Reduce heat, cover and cook until the blueberries have broken down into a syrup. Let it cool and then add to the primary fermenter using a funnel before pitching the yeast. Make sure to use a blow-off tube, as the fermentation can be extremely vigorous.
Leave here for 2 weeks, then keg as normal.

Notes: WOW I usually do not like wheat beers but WOW! This is taste amazing. Very simular to blue moon but with a heavier mouth feel and hint of honey in the finish. I will brew this one again!
I cracked A bottle for a few friends while I was having a little beer tasting party at my house and watching the Portland Timbers mash FC Dallas for the 3rd time this year. The beer was not yet carbanated but had a very distinct honey flaver and honestly tasted just like blue moon. |

Notes: I should call this "Blown Gasket Oatmeal Stout." The airlock blew off while I was away for a week, and I returned to see a carboy, crusted with dried krausen. Regardless, it actually turned out well.
The final volume is low because I lost a good amount of water due to the seeping of 2.5 lbs of grain and oats. I didn't top off, preferring a stronger brew with fewer bottles. I plan to top off next time though.
I lost about half a gallon of the batch due to the blown fermentation, but it turned out pretty well! Excellent head retention and dark amber appearance. It didn't have quite as much chocolate or roasted flavor as expected. There is a significant nutty/toasted aftertaste that adds character. I plan to cut the crystal 60L from 8 to 5 oz or so, and add a source of chocolate and maybe lactose. I also plan to use a yeast with better attenuation. I was surprisingly pleased with this one, especially as it aged! Regardless, there is room for improvement. |
