Notes: I steeped grains for 30 min. I then added the 2 lbs of Pilsen Light Dry Malt and 1 Oz Mt. Hood Hops to the boil for 60 min. My understanding is that by splitting the dry malt extract into 60 min. and 15 min. is to achieve a higher attenuation of the grains. At 30 Min. I added another 1 oz of Mt. Hood Hop pellets. At 15 min. I added the other 6 lbs of dry malt extract .Once cooled to 68F, I took the OG which was 1.061. I added the yeast and fermented at 65-67F for 9 days at which point the FG was 1.012 and fermentation appeared to be complete. I bottled with priming sugar and left at room temp for another couple of weeks before chilling it at 33-43F for "lagering". It is a tasty beer. |

Bring 1.25 Gal water up to 156 deg F in kettle, add grains in bag to mash water and stir thoroughly to break up dough balls. Let sit for 60 minutes; before mash is complete heat sparge water in a sauce pan or tea kettle to 180F. Remove bag from kettle and place colander in top of kettle. Turn burner to high, and sparge the grains in the colander. After sparging discard grains and continue as you would with a normal extract recipe.
Adjusted for no-chill, with extended hop boil time of 10 minutes, and smaller boil volume. |

Notes: Start with 14.5 cups blackberries puree and strain to leave seeds behind.
Recipe only calls for Tettnang, but the Alpha % was lower on the bag I got and wasn't getting to the recipe's desired 12 IBU's so I decided to add a little leftover German Northern Brewer to bring them up a tad.
Ferment at 65-68 degrees.
Rack to keg or secondary and age for 4 months. (Test small sample monthly to see how sourness progresses. Longer aging will increase the sour flavors.) |

Notes: Original Gravity was 18.3 prior to dilution with the hop tea (about 0.8 gal) - so calculated about 15.3 = 1.0622
pitched yeast into aerator at 5pm on 3/14
made hop tea with 0.8 gal water with 1st dry hops at 11am on 3/15
also added 2oz maltodextrin and yeast nutrient to the boiling water (because I forgot in the boil!)
added hops to 185 deg water. instantly dropped to 178. let stand 2 minutes then started chilling
Fermentation started cool... 63 deg for first 4 days. Then put the heater on it and it maintained 72-74 deg for the remainder of fermentation |
