I've brewed this twice..and it's a killer IPA..BITTER AND TONS OF HOPS!! also suggest culturing the yeast from a 6 pack of Two Hearted Ale. Bell's yeast is a beast.

1. Fill brew pot with 10 L of water.
2. Add crystal malt (in steeping bag) to brew pot and turn on heat.
3. Remove steeping bag when temp hits 80 deg C.
4. At boiling add 1.5 kg of DME and first hop addition (boil for 15 minutes)
5. Add remaining DME and final hop addition (boil for 5 minutes).

Notes: It has been quite a while since I made this and my Fiance accidentally through away my notes so I'm writing this down from memory I don't remember the OG or FG but It turned out Way higher ABV than stated above About 22%. After pouring Wort into carboy with 2 gal cold water I aerated for about 30 min.

I let ferment for a little over a month (This wasn't intentional I ended up moving and didn't have the time to bottle but I'm glad it happened) Then bottled normally.

My original plan had been to make a Honey Dunkelweizen But when all was said and done it tasted much more like a porter. Very Smooth taste with a slight sweetness, but don't let that fool you it packs a mean punch! I wouldn't hop in a car after drinking one if I were you! I hope you enjoy it as much as my friends and I did cheers!

Notes: In the recipe, "grits" means corn meal.

Because I used corn meal, I had to make a separate cereal mash from my main mash. I used the following website for instructions on how to performa a cereal mash:

First, I took 85% of the 2-row and began my main mash as normal (150F). At the same time in a separate pot to make the cereal mash, I took the remaining 15% of the 2-row and all of the corn meal and mixed it with enough water to suspend the grains ("a thin gruel-like consistency"). I heated the cereal mash to 160F, held it for 5 minutes, then proceeded to boil it for 30 minutes. The main mash continues at 150F.

When the cereal mash is done, transfer it into the main mash and hold it at 150F for another 45 minutes.

Sparge as normal, add the LME and brew as normal.

The initial yeast activity was crazy, I had to put the fermenter in an ice bath to bring the temperature back to the desired 70F.

Notes: Similar notes to chocolate orange candy, but much more subtle. Desired outcome is a Dry Stout with smoothness and improved mouthfeel from oats matched by chocolate flavors, then impart a floral, bitter aftertaste followed by lingering sweet orange citrus flavor and aroma.
