El valor aproximado por litro es de $700. La receta esta basada en gran parte en una receta de Pale Ale (All Other Pale Ale) de la Cerveceria danesa Mikkeller,la que es considera por muchos en el mundo cervecero, la mejor del planeta. Los parametros generales son parecidos, variando claro en las maltas, lupulos y levadura de acceso local, sobre todo en cuanto a precio.
En cuanto a valor por receta, por experiencia recomiendo tener un valor mínimo de inversión en materia prima, ya que se puede pasar de una diferencia sustancial entre una cerveza mediocre que no entregue nada nuevo al consumidor, a una cerveza de alta calidad que provoque experiencia, reflexión y calificación en el pre, post y durante consumo.
Un ejemplo a graficar: en una receta de 60 litros que pueda tener un valor de $25.000. Se saca aproximado en limpio 50Litros, de los cuales salen 150 botellines, estos al ser puesto en venta a $1.000 (restando gastos de embotellado y etiquetado) puede quedar de ganancia parcial de $105.000 ($700 cada botellín). Si a estos le resta $25.000 del valor de la receta queda como ganancia final $80.000. Divido en 4 partes son $20.000.
Si este mismo ejercicio se hace con una receta de alta calidad de $35.000, la ganacia final seria de $70.000, divido en 4 partes, seria $17.500.
De todas manera a mi consideración, sea una cerveza buena o genérica, esta no debería tener una ganancia minima parcial de $1.000 por botellin (asegurando ganancia final de $115.000; en una receta de $35.000, siendo $29.000, dividida en 4 partes) ya que se desvaloriza el trabajo detras de ella. O en otra opción aumentar los litros en cada cocción y/o ventas altas. Otra opción, es el reciclado de las botellas, pero es un trabajo agotador el limpiar y asegurar que queden bien higienizadas, es una práctica que a la larga se abandona, por lo tedioso de la labor misma.
Las botillerias en general compran cervezas a buen precio ($1.300 por ejemplo), ya que de por si siempre tienen un margen de ganancia muy bajas, ellos ganan por cantidad. Es decir no les importa tanto en teoría comprar a $1.300 y venderlas a $1.450.
En cuanto a bares, la ganancia que obtienen es mayor, pero el volumen generalmente es menor.
En cuanto a venta directa el precio varia según estime el vendedor. Aveces una sola persona te puede comprar regularmente si la relación precio/calidad es buena.
En cuanto a venta de barriles la ganancia es mucho más baja, pero de consumo más alto (en una buen fin de semana de un bar se puede consumir el barril completo), el precio general de venta de litro de cerveza va desde los $2.000 el litro, hasta los $3.000. Uno de los factores que más pesan es la calidad de la cerveza, ya que el locatario puede pasar de vender un shop a $3.000 a pasar a vender a $4.500, en variedades imperial/special o importadas. Por lo tanto se relativiza según las cervezas que necesite en ese momento, en verano le dan duro a las ipas, lager y cervezas versatiles por ejemplo.

- Mash water = 4.54 gallons (17.2 liters)
- Sparge water = 3.41 gallons (12.9 liters)
- Expecting pre-boil volume of 6.6 gallons (25 liters) or 6.86 gallons (25.9 liters) after 4% wort expansion, actually had 25.8 liters or 6.82 gallons.
- Did a protein rest at 122F for 15 minutes before going up to 154F mash temp
- Expecting mash efficiency of 84% (at expanded wort volume) which implies a pre boil gravity of 1.046. This is using grain father's mash efficiency calculator. Would be 83.13% on brewer's friend.
- Mash temp settled right it at ~154F
- Hit 10.3 plato pre boil gravity which converts to 1.041 vs. 1.046 target so 75% mash efficiency (76.6% on brewer's friend) vs. 84% expected.
- Expecting to boil down to 6.0 gallons (after wort cools) so boil-off tool estimates 1.051 OG, Actual original gravity reading was 11.9 plato which converts to 1.048 vs 1.051 expected. Extended boil to 90 minutes to get closer to target OG (this caused me to barely get 5 gallons into keg).
- After boil had ~6.XX gallons [XX.X liters] (expected 6.0 not expanded, 6.26 expanded) in the kettle and ~5.5 gallons made it into the fermenter.
- Pitched 2 smack packs and set fermentation chamber at 68F, slowly ramped up to 72F after a few days and held there.
- Packaged on 2/6/21, batch #50, FG was 1.013 (at 68F) which converts to 1.014 so 71% attenuation vs 74% avg. and 77% expected. Not doing starter most likely led to a slightly lower attenuation.
- Fill keg to 52.03 pounds = (1.014FG x 8.345 x 5 gallons) + 9.72 (empty keg weight + packaging hoses attached). Barely got 52 pounds (had to tip fermenter). |

Notes: Fermentation temperatur is 20 degrees till 50% attenuasjon. Then temperatur is to be decreased to 17 degrees into end of fermantation. When the beer has reached FG. Temperatur is decreased again to 6 degrees till the beer is ready.
Gassy beers are much more difficult to drink in quantity and proper carbonation level is even more important for low gravity beers like bitter. Too much carbonation in a low gravity beer results in a harsh, carbonic bite. While carbonation is important to filling out the mouthfeel of a beer, and it helps drive aromas up to the nose, too much carbonation can make a small beer seem thin. Target a low level of carbonation, around 1.5 volumes of CO2 for bottled beer and 1 volume of CO2 for cask conditioned beer. A typical American pale ale is carbonated to around 2.5 volumes of CO2, so cut your priming sugar in half at bottling time and you’ll be close to the right level of
carbonation. |
