| Notes: Strike water was 172F and dropped it to 153F. After a few minutes recirculated a gallon and took a reading which put it at 151F. Took a pH and it's at 5.3. Got 77% kettle efficiency. Had a good boil going but didn't quite hit 5.75 gal in the fermenter. I topped off with a bit (maybe a pint) of pre-boiled water to get to a good water level. My efficiency was lower than I had expected. It might be because I used more grain that I usually do. 9/24 the fermentation has been between 66 and 70F so far. Today I also decided to add a half pound of corn sugar into the brew to kick up the abv a bit. 10/1 Dry hopped and took a reading which put it at about 1.016. Botteled on 10/10/2013. Got about 50 bottles from the corny keg which is about 4.75 gallons. Primed to 2 volumes C02. |

heat a gallon of water to dissolve the sugar completely, do not boil. Mix all ingredients in a bucket or carboy with additional water to bring to 5 gallon total volume. Add the yeast and nutrient and let ferment.
After fermentation, rack to a bottling bucket, add the sorbistat, vodka and additional sugar to sweeten to taste. Bottle and cap. This will be a still lemonade with a kick you will not believe. |

Step by Step
Crush the roasted barley very fine. Run it through a coffee mill or use a rolling pin to turn it almost to dust. That is critical to getting the right flavor and color with this recipe. Mill the remaining grains as normal and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 120 °F (49 °C). Hold the mash at 120 °F (49 °C) for 15 minutes then raise the temperature to 148 °F (64 °C) until enzymatic conversion is complete. Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (24.4 L) and the gravity is 1.032 (8 °P).
The total wort boil time is 90 minutes. Add the bittering hops with 60 minutes remaining in the boil. Add Irish moss or other kettle finings and the last hop addition with 15 minutes left in the boil. Chill the wort rapidly to 69 °F (21 °C), let the break material settle, rack to the fermenter, pitch the yeast and aerate thoroughly.
Ferment at 69 °F (21 °C). Slowly raise the temperature during the final 1⁄3 of fermentation by 6 °F (3 °C) to reduce diacetyl levels in the beer. When finished, carbonate the beer to approximately 1 to 1.5 volumes and serve at 52 to 55 °F (11 to 13 °C). |

Take yeast out of fridge 3 hours before pitching.
Bring the wort to 140 degrees, add 5g salt and 1g coriander, and then turn the heat off (heat for 5-15 minutes).
Transfer a portion of the wort to a starter flask.
Pitch WLP644 Trois when temp is at 70°.
Leave remaining wort in kettle.
Adjust PH ~4.2 to limit growth Clostridium butyricum and other potential off-flavor bacteria. Add 2 ml of lactic acid.
Chill the wort down to 95°.
Add 5 oz of Goodbelly Mango drink.
Cover with blankets.
Allow it to sour for 24 hours. No external heating is required.
Target PH: 3.6 - 3.8
After the souring phase, heat to kill the Lactobacillus before adding the WLP644 Trois for 5-15 minutes at 140 degrees.
Chill the Lactobacillus wort down to ~70°F and pitch WLP644 Trois.
After 2 weeks a stable gravity should be reached.
Rack or transfer off as normal to bottles or a keg.
Goodbelly: 8oz per 5 gallons = 1.6oz per gallon X 3 gallons = 4.8 oz (5 oz)
Salt: 0.5oz per gallon - 0.0625 per gallon X 3 gallons = 0.1875oz (5.315g)
Corriander: 1oz per gallon = 0.125 per gallon X 3 gallons = 0.375 (10g) - cut by 50% to 5g
Lactic acid: Using 1 mL of 88% lactic acid per .1 shift in pH for 5 gallons of wort is a good starting measurement. As an example, say that 5 gallons of wort has a pH of 5.0 just before pitching the Lactobacillus culture. Begin by adding 5 mL (1 US teaspoon) of food grade lactic acid to the wort for a target of ~4.4 pH. |

This beer is about pushing the boundaries, it is about taking innovation in beer to a whole new level. Dark and decadent, plum, treacle and roast coffee are amplified beyond any stout you've had before. This level of alcohol can be achieved using a domestic freezer. Use a container with a tap close to the bottom so you can run the un-frozen, concentrated beer from under the ice on top. You may have to do this three or four times.
