Notes: Added Chaga at flameout.
Added maple syrup to one keg (7 oz per 5 gal). Reasoning was this thread:
http://discussions.probrewer.com/showthread.php?3722-Maple-Syrup
Soaked 0.5 oz coffee beans (Ethiopian Sidamo coarse grind) and 1.5 vanilla bean in vodka just enough to cover them, then added to the other 5 gal keg with oak chips.
Yeast harvested from Blonde Ale (6th gen Nottingham).

Notes: Lagunitas IPA
LAGUNITAS BREWING CO., PETALUMA, CALIFORNIA, U.S.A.
In keeping with the fun feel of Lagunitas, most of the brewery’s beers feature a little story on the
label. Half the pleasure of these beers is trying to figure out what it all means! This India pale ale
sports deep gold in the glass with a creamy beige foam cap. The nose takes in a pleasing blend of
floral hops coupled with citrus. This light- to medium-bodied IPA shows a well-balanced palate that
is not too bitter, consisting of citrusy hops and malt. The finish echoes the aroma and flavor, a
pleasing combination of hops and malt. Lagunitas IPA is a most worthy West Coast IPA. |

Notes: This is a MoreBeer! Recipe Kit that came with a 5ml bottle of Distilled Chinook Hop Oil to be added to taste at Kegging.
Brewed Indoors using my Induction Cooktop and mashed in far too low (149 degrees) BUT mashed for an hour and 10 minutes.
Horrible efficiency on this batch at 63% which should yield a Beer that is 4,5% instead of 6.5% ABV, However the tasting of the beer is really nice and should still turn out to be a very tasty beer.
The Brew Day was really no longer than the normal 5 hours and there was a generous rolling boil using the Cooktop.

Notes: If going with 100% brett, build a 3-4 liter starter and LET THE STARTER WORK FOR 7 DAYS, if going with a combo, pitch Ardennes at 68f, let rise naturally and ferment for 4 days, then pitch one vial of brett.
Amarillo would be a good sub for Citra if available.

| Notes: Sub Patagonia Especial Malt 140 for Special B. Fall is a great time for bonfires and beers, but it's also a disappointing time if you're a Cubs fan. And what better way to overcome the hangover from the long season than with a little Hair of the Goat. Smoky and rich, with a blend of noble hops for balance and flavor, this is going to be a great beer to share while commiserating the season gone by and look forward to next Spring. At Pro Brewer 1.5 pitch rate, 4 packets Nottingham for 44g; I chose Nottingham because it's got good tolerance to lower fermentation temps and because the required pitch rate would require multiple Wyeast packs and would be too expensive. |
