Notes: Mill grains and mash at 157°F (69°C) for 45 minutes.
Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate.
Boil for 75 minutes, adding hops and finings according to the schedule.
After the boil, cool wort to 185°F (85°C) (for example, by adding filtered room-temperature water), add whirlpool hops, spin for 7 minutes, then allow to settle and rest for 25 minutes.
Chill to 63°F (17°C), aerate wort, and pitch yeast. Ferment at 66°F (19°C) until the gravity has dropped to about 1.023, then allow free rise up to 72°F (22°C) for diacetyl rest.
When fermentation is complete, drop yeast over 2 days or rack to secondary. Add dry hops and ALDC enzyme, rousing gently with CO2. After 1 or 2 days, when the aroma is appealing and the beer smells clean of acetaldehyde and diacetyl, chill to 32°F (0°C), package and carbonate to 2.5 volumes, and condition for at least 2 days.
BREWER’S NOTES
Water: We have very soft water, so we add about 150ppm chloride (to the mash) as well as sulfate (to the kettle) for an even profile that adds some body but also finishes clean.
Acidification: Use phosphoric acid to adjust your sparge water to 3.0 pH. At wort transfer, use lactic acid to acidify your wort to 5.15 pH. |

Notes: Add whirlfloc tablet to get clearer beer. While this is an oatmeal stout, we might not want the haze in it- just the oatmeal mouth feel.
Mash at 98-110 degrees for 25 minutes (helps the beta-glucanase enzymes break down the beta-glucans), then bring up to 153-155 range for 50 minutes. Mash out at 168+
8 QTs of 115-116 degree water should be good for first mash. (Target 104-105 temp) (Start around 6-7 then adjust to hit target)
Then 11 qts of 166-167 degree water to bring it up.
(Target 154-155). (Maybe start with 10 qts then if needed can go up to 12 total quarts. Boil or add cold water to adjust)
*Be sure to have 5.5 gallons of beer in the fermenter*
Ferment for 2 weeks in the stainless steel then move to the glass containers versus plastic bucket.
Make sure to have 5.5 gallons of beer available to that these can be filled up pretty close to the top. If there is a tiny bit left over, fill up a bottle or two (For these two bottles, they will need a tiny bit of sugar to carbonate)
Used 3.25 oz of corn sugar for the 80% size batch
Notes from brewing the first time:
When brewing, I hit 102 or so for the first step of mashing, kept it there for 20 minutes. I was around 150 or 151 for step 2. Kept it there for 45, for a total of 65 minutes of mashing.
Also did a 65 minute boil versus 60.
This didn't end up overly caramely. It wasn't too sweet, but had a tiny bit of sweetness. Below a 40L would make it sweeter, which would be okay- 60L or 80L might make it too roasty. I'm thinking 20L-40L is a solid place.
In time, I might consider slightly increasing the Victory to maybe around 10% for a slightly more "bready" flavor. Overall, though, I am very pleased. This came out well.
If this weren't cut back to 80%, the original totals were:
7lbs Maris Otter, 2lbs Oatmeal, 1 Lb Victory, 1lb 40L, .75lb Chocolate Malt, .5 Lb Roasted Barley, 2oz Golding, 1oz Fuggles.
This benefitted from a long bottle conditioning to allow it to round out. It truly needed 1 month in the bottle. Good roastiness- some coffee flavor but not too much.
It came out nice and dry like I would want- not too sweet. Keeping it between 150-152 for mashing is a good move going forward. Outside of small tweaks, this is really good as is. |

Notes: 10/4/2017: This is a very simple and cheap pale ale with a small boil for brewing demonstration at the Green Bay Rackers booth at the 2017 Northeast Wisconsin Craft Beer Show. It's made a simple specialty grain soak extract beer. Should be very flavorful without being filling.

Brew Schedule:
Heat 2.5 gallons of water to 160 degrees
Place specialty grains in grain bag and steep for 20 minutes
T20
Remove grains and begin heating to boil
Add ALL DME, 8oz Cane Sugar
Boil and break
Add .75oz Columbus Hop Pellets
T15
Add 1tsp Irish Moss

Flameout, Add 1oz Mosaic Hop Pellets

10/6/2017: OG was 1.053 with 3.5 gallons of wort
Notes: This beer was SUPER easy to make, I could have knocked it out in less than two and a half hours had I not been talking with people and moving around the show. The ice bath in the tote worked well, I just stuffed it in there and left it stirring once and a while. Started at 5pm and got it in the fermenter and the yeast pitched by 8:30p. Didn't lose as much wort as planned from boil off, had to keep the pot partially covered to keep a strong boil on the induction cook top. It got the job done well enough though! I look forward to using this one for many more demos in the future!
10/12/2017: Took the first sample today. Fementation is practically complete and beer is beginning to clear. Seems to be turning out to be a nice flavorful dry pale ale. Dry hopped with one ounce of Simcoe hops, should add some nice aroma to the beer. FG looks like 1.005, that attenuation tho :) Looks like a nice 6.3% ABV, a little high but I don't mind. US-05 for me has been consistently hitting 1.008 and lower in most of my beers lately. Re-hydrating and pitching a large amount of this yeast seems to bump down the fg by a couple points more often then not. I'm very happy with this result! I could probably do with using a little less hops but it's still a bit early to tell.
10/15/2017: Moved to chamber to cold crash. Plan to bottle within the next couple days.
10/17/2017: Bottling day, FG is steady at 1.005. Bottled conditioned with a target of 2.4 volumes of C02. Used about 1.7oz corn sugar in about a cup of water for priming solution. Simcoe might be strange but it might be good! Bottled 29 12oz bottles. 43FC |
