-Steeped Caramel at 160 F for 15 minutes.
-Boil overflowed, lost about 2-3% of liquid.
-All hops bags busted open due to using flimsy tea bags.
-User copper immersion chiller.
-Left about an inch of wort in lieu of filtering loose hops.
-Dry hopped 1 oz Citra.
-Ignored Wyeast instructions, pitch yeast at 45 minutes instead of 3 hour activation time.
-Spilled 20% of yeast solution.
-Original Gravity: 1.072

Notes: Adaption of the BrewDog Punk IPA 2010-Current AG Recipe which appears in DIY Dog.
Changes:
Recipe uses Extra Pale - using Pale 2-Row here.
Substitutes 2.5kg of Extra Light DME for 1.38kg of Extra Pale.
Uses more Caramalt (0.9kg rather than 0.25kg) to bring the colour up to the target SRM of 7.6
Hop selection is the same as the Punk IPA but with boil addition times and boil hop quantities adjusted to hit their IBU target of 40.
Dry hop quantities are the same as the DIY Dog recipe.
Target ABV for Punk IPA is 5.6% (OG 1053, FG 1011)
Brew day: Ended the boil with 16l of wort way up at 1.086. Adjusted down to 1.054 with 9l of water. Yeast pitched at 21c.
After the first week in FV it's at 1.018. Colour is still a little darker than Punk IPA but the bitterness is spot on. Good hop flavour at this point. Will give it another week in the primary before moving it to a secondary for dry hopping.
At the end of the second week all fermentation activity has stopped and we have a FG of 1.010 giving an ABV of 5.78%. Very nice, drinkable, IPA at this point - slightly hoppy tones, almost earthy, can't tell the Punk IPA and this brew apart in terms of bitterness at this point and the flavour is very clean.
Bottled 40x500ml bottles (batch primed with brewers sugar). Chilled a little sample prior to bottling and the flavour is a good match for Punk IPA! Very similar bitterness, aroma and flavour.

Notes: Step by step:
Steep crushed malts in three gallons of water at 150º F for 30 min. Remove grains from wort, add malt syrup and powder and bring to a boil. Add Cascade and Nugget (bittering) hops, Irish moss and boil for 45 min. Add 0.25 ounce of Fuggle hops (flavor hops) for last 15 min. of the boil. Add 0.5 ounce of Fuggle (aroma) hops for the last two minutes of the boil.
When done boiling, strain out hops, add wort to two gallons cool water in a sanitary fermenter, and top off with cool water to 5.5 gallons. Cool the wort to 80º F, aerate the beer and pitch your yeast. Allow the beer to cool over the next few hours to 68-70º F, and ferment for 10-14 days. Bottle your beer, age for two to three weeks and enjoy! |

1. Put 1 gallon of water in your kettle.
2. Put all 6 pounds of DME into the water. Stir frequently to reduce the chance of clumping.
3. Proceed to steep the grains for 25 minutes at 152 degrees.
4. I pour the last two gallons remaining over the grains into the kettle. I typically do room temp water, but you can heat your water up.
5. Bring to a boil. Add 60m hop addition.
6. Add half whirfloc tablet at 15m.
7. Add 5m hop addition.
8. Remove kettle from heat. Let it naturally cool to 180 degrees.
9. Once the wort gets to 180, drop in the flame out hop additions for 25 minutes.
10. Cool and top off with water to 5 gallons. Pitch yeast. Ferment at 66 degrees. |
