Beer came out great. Nice light and flavorful. Could def brew it again just like this. The first few days it tasted like belgian blonde. After a couple weeks I thought I could taste lime and corn but now I do not. I can taste a bit of grainy flavor...
Next time you could consider trying to go for more corn flavor (not sure how, just more corn, or do someting to the corn or get a different corn that retains more flavor?) and more lime essence which could prob be done with some particular hop. Also consider lowering the vienna and pilsner, for more of a clean taste.

Came out good. Tried using omega models strain but had to settled for 2007. After a couple days no bubbler activity or krausen so i thought it was dead so I added a pack of 3470 maybe wasn't necessary maybe I just don't understand truly bottom fermenting yeast.
Can one tell the difference between this and American lager, or is it all in your head. To me this brew has notes of lime and corn which seem pretty distinct to mexican flavors.
At first tasted like belgian single (same hops!) So I let the keg chill for a few weeks and when I retapped it it was really clean clear and under control

Notes: Add crushed malt and 5 Star ph Stabilizer to 16.05 quarts of 128 degree water. Temperature should stabilize at 122 degrees. Hold for a 30 minute protein rest. Add 9.1875 quarts of boiling water and heat if necessary to mash. Temperature should stabilize at 152 degrees. Hold for a 60 minute starch conversion. Add heat and mash out to 168 degrees. Sparge to collect 8 gallons of wort, bring to a boil for 90 minutes and follow hop and whirlfloc schedule. Final volume to fermenter should be 6.25 gallons. Cool to 68 degrees and pitch yeast. After 1 week rack to secondary. After 2 more weeks bottle or keg.

i rushed the end of this brew to have it ready for a trip to nj.
i believe i let it warm to 70 on day 10
cold crashed on day 11
kegged and carbed on day 12
canned on day 13
the cans turned out a little weird once we got to nj. diacetyl or dms or something. maybe a packaging issue.
when i returned home (day 25) the beer is still crisp fresh tasty and now clear.
overall i wouldnt be scared to try this fast fermentation schedule again, it turned out pretty clean. probably would want to start the diacetyl rest earlier and maybe for one more day. and it would be ideal to cold crash for at least a week before kegging. maybe two if you can stand it :-)

brewed last night. original recipe i had 65% efficiency but came out at like 72. wanted to land at 4.9% but this will be 5.5%. oh well.
i think my efficiency is actually decent for 10-11 lbs grain, then goes down as i add more and more grain.

not sure if i will use this on this brew but for reference, here is rusty's fast lager schedule :
1. 50deg for first 48 hours
2. raise one degree each day for 10 days
3. on day 11, allow temp to free rise to (warmest temp in brewery, but lets just say 70)
4. 9 days later start the cold crash |
