2x Cinnamon Sticks
Heat and Mix 0.5 Gallons Cider with Sugar and Cinnamon until clear. Add to fermenter and top off with 3.5 gallons cider. Pitch yeast and shake.
Ferment to taste (~3 days / 1.040). Package, carbonate, drink. |

Notes: Styled after Duvel: Slightly fruity, dry aroma, well-hopped beer and with a slightly bitter aftertaste
Recipe inspired by a Duvel clone partial mash from a magazine.
Duvel website describes hops used are Saaz & Styrian Golding.
>Make a big yeast starter (3L for 5gal batch).
>Option: alternate yeast is White Labs WLP570 (Belgian Golden ale)
-->used dry trappist yeast this time
>In steeping pot, heat mash water to 72C.
>Add crushed grains in grain bag
>Steep grains at 66C for 45mins
>Prepare brewpot boiling water
>When steep over, add subset of brewpot water (~32% of original steeping volume) to the grain tea in steeping pot, then pour all through the mash grains via colander into brewpot.
>Heat brewpot to boil
>Stir in dried malt extract
>Add hops & begin 60min boil
>With 15 mins left in boil, add kettle candi sugar, hops and Irish moss, then turn off heat and stir in light dried malt extract (substituted for original liquid malt extract)
>Stir well to dissolve extract, then resume heating (keep boil clock running while you stir)
>At end of the boil, add last charge of hops, cool wort and transfer to fermenter.
>Aerate wort and pitch yeast
>Ferment at 20C
>Option:The brewers of duvel pitch at 16C and let the temperature rise to as high as 29C during primary fermentation.
>When primary fermentation is complete, rack to secondary and add dosage candi sugar dissolved in hot water held at 71C for 15 minutes.
>Bottle when beer falls clear |

Notes: 5-29-2021 Pressure fermented .
6-4-2021 -- Dropped one pound of 2 row and droped 60l to .5 lb to get to under 5%. Also dropped the sparge. Changed up the hops dropped the oz of Spalt at 60 mins Dropped .4oz hersbruker at 10 and 5 mins, and dropped the hersbruker .5oz dryhop.
1-26-22 The beer got reviewed by the Brew Dudes https://www.youtube.com/watch?v=XdFoHJEfv1o With that said going to bring back some hops and change out the water profile. Bumped the Gypsum from 3g to 7g. to get away from the balanced profile and try and make the hops pop a bit. With the hops I added another .5oz of tettnanger at 60 mins and added another .5oz tettnanger to the dry hop.
1-29-22. Ended up using Harvest as no more 34/70 at the shop. |

Notes:
Strike with 9 gallons at 160 to hit 145. Raise through Herms to 155 after 45 minutes. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 11 gallons at 165-170
Safeale 04 (wyeast 007) fermented out three generations in. Yeast has a good clean ale flavor. Made a 2 liter starter two days before brew day 1-21-12.
Pitch yeast at 65. Add 1vl for 2min of pure 02 prior to pitching. Ferment at 65. Raise to 70 degrees after a few days to clear diactyle.
Add a Brett C culture in secondary after building it up via starter. Adds a nice leathery/citrus/pineapple complex flavor. Dry's the beer out substantially and really adds a huge amount of complexity. Drying the beer out helps substantially in the finish.
