| Notes: Put the beer into the second container after primary fermentation. Add raspberries together with Brettanomyces yeasts and let them stand for 2 months at room temperature. We spin into a cuvette or keggle and saturate CO2. After bottling we let mature at least 3, preferably 6 months and more. |

What a fantastic beer this was! Couple of things I would change. I would age it longer than a month to let the Brett kick in and I would go a little easier on the high alpha hops to let the Brett stick out more.... |

Notes: Fine chop and toast about 10 lbs. sugar pumpkin @ 320 degrees until it turns a golden brown and edges slightly caramelized. (2 hours?) Mash the toasted pumpkin @ 150 degrees for 90 minutes. (18 quarts water dough in @ 160 degrees) Use the pumpkin wort as strike water for the main mash.
Adjust main mash strike water and or calculations as needed for desired mash schedule. |
