Didn't hit my numbers and boiled off too much so I added half a cup of sugar and topped off up to 3 gallons into the fermenter.
Dry hopped cool for 1 day with 1 ounce of Spalt Select, ended up with 26 bottles.

Notes: After conclusion of mash, first hop addition is added as whole volume is raised to 80C for "pasteurization".
Once desired temp is hit, remove hops, place lid on pot, and set outside (in cold Canadian winter) to cool to ~30C.
Second hop addition is to be made directly to fermentor, 24 hrs after pitching yeast.
After 48hrs, beer is to be racked to a CO2 purged corny keg where it will be sealed to naturally carbonate with the tail end of fermentation and dry-hopped with a further 40g of azacca (directly into the keg).
*Yeastex added during ramp up to pasteurization*
Dry hopping in a corny keg with loose pellets completely plugged the dip tube - had to rack to a purged carboy, let settle for 24 hrs, and then rack back into a cleaned keg.
Beer is tasting great so far after a couple of days in the keg!

Kaffir Leaves: make an infusion by boiling 4 or 5 leaves (which are first torn into pieces) then added to a pint of boiling water(or enough water just to cover) and steeped until cooled - add to beer for 3 days
Beer description:
Pale ale full of tropical vibes from loads of aromatic american hops, balanced with kaffir lime leaves. All backed up with a hint of malty sweetness. A light Summer Ale to enjoy over the long evenings. Can’t promise you an escape, but will take you a pint closer to the paradise! |

use toob for dry hops in order to keep the slurry pure
put dry hops in at 1 week - significant krausen remained
Beer came out super duper clear!
1) put dry hops in fermenter
2) cold crash for 3 days
3) transfer cold beer to keg and immediately add gelatin
4) leave on high pressure for 3 days
