We overshot our intended OG of 1.077 a little, the measured OG was 1.083. Throughout the day, a small number of visitors stopped by, they enjoyed watching the all grain process, as well as a few party folks who brought brownies and beer. Our efficient team cleaned all the equipment and the clubhouse and we were completely out by 4:07PM. There were no major problems with this shop brew. The grain mill was a bit cantankerous but it accepted its lot in life and worked well once it was tweaked enough, we had our strike water waiting for us thanks to the automatic start up of the HLT, and we hit our mash temp so fast, it was like magic. Our shop boil kettle does take its sweet time to start that rolling boil, but once it gets going, things start hopping! We all had a fun time with great weather and a fantastic crew! |

Notes: Farmhouse IPA fermented with Brett Trois Vrai and Brett Clausenii, with Calypso, Sorachi Ace and Nelson Sauvin hops.
Aim is to keep bitterness low to allow the yeast flavors and hop aroma's to come through without restrictions.
Added 1.5 liters of water at end of boil to increase volume.
After 4 days, measured gravity. 1.010!!!
Huge overripe pineapple/tropical smells coming from the fermentor. Sample tasted very dry, hoppy and fruity. Great.
Added dry hops and raised temp to 25 C.
Turned out great, very interesting flavors. Hard to pin down but a lot of overripe pineaple and tropical fruit. Nelson and Brett Trois is an awesome combination! Maybe next time sub the calypso for Hallertau blanc to push the white whine notes.

Notes: Prepared the Mash Tun by filling with 3 gallons of hot water ~ 130 degrees (left for 30 minutes). Poured water from Mash tun into kettle and bring to 4 gallons - heated to 170 degrees. Poured water into mash tun, added grain and stirred for 5 minutes. Temp at ~ 157 degrees. Sealed. At 30 minutes, temperature - 156 degrees.
At 60 minutes, drain liquid in mash tun to grain bed, add 1 gallon of 170 degree water, stir lightly, and drain to grain bed, repeat twice more. Drain completely into kettle. ~5 gallons of wort from sparge
Begin boil. All adds on schedule. OG 1.061
Aerated. Ended up with 4 gallons final for fermentation. Did not add water.
Add first dry hop (4/22) (8 days) 0.5 oz of Simco and 0.5 oz Citra. SG - 1.009 (abv - 6.9%)
Plan to add x oz of Citra for final 4 days. Bottled 5/7.
Future: during sparging, gently prise the grain away from the wall to avoid potential coning. First gallon direct, 2nd- prise, 3rd - prise, 4th direct. Will provide greater extraction potential. |

Make 1L starter with smaller jar (~200ml) of WY1272 slurry, 2G, from December's red ale, about 24-26hr ahead of time and pitch whole thing at high krausen after oxygenating for 50sec. |
