| Notes: This beer is delicious. I cool the wort to around 75 and add the whirlpool hops and then leave to steep for an hour. I do EBIAB so I set my urn to a setting around 65c so that the temp stays up. |

Notes: Red Wheat is Raw Wheat from Breiss. I also oven baked it at 250 F for 4 hours before being millled and it was not washed or germinated beforehand.
Strong head retention from the wheat, warmth from the alcohol and tasty malt in the aftertaste makes for an interesting IPA.
Hops taste of grapefruit/melon with moderate-strong bitterness. The flavor/bitterness is slightly in favor of bitterness.
The FG should be 1.02 or lower, not 1.025 |

Jordan Brown No honey malt. And that's a lot of crystal. Use more base malt or rye instead. I used 3 lbs of rye in the double rye pa I'm drinking now and I think it needs even more. I used 1 lb in my first rye pa.

Mark Johnson Don’t ditch the honey Malt but drop it to ~5%, lower the crystal Malt to one pound and either make it up with your pale Malt, or if you want to go crazy use some pearl malt to make up the difference. Not sure I’m feeling the galaxy with rye but to each their own...I’ve always liked centennial in a rye, but if you want something new perhaps glacier would be nice

oh and if you really want to make a rye then it should make up about 50% of the grain bill otherwise its just an adjunct IMO

I'm shooting for 3 gal into the (3 gal) keg. So 3.4 gal post-boil, and will lose maybe .2 gal absorption into the hops in my hop spider, and then about .2 gal to trub.
Originally planned to use Wyeast 2001 Urquell yeast, but the old pack I had didn't grow up in a starter, so switched to 2278 (my LHBS was out of 2001 that day). Either should be fine, or another lager yeast that favors maltiness (trying WLP810 at 55° for current batch).
Can use fast (Narziss or Tasty) lager profile: Raise temp after initial growth phase (2-3 days), then raise temp 2°/day for 6 days to 67 and hold for 5 days (Diacetyl rest). Or use more standard lager profile: keep at initial temp for about a week, then slowly raise for D-rest. Then cold crash, fine with gelatin, rack to keg and lager for 4-6 weeks. |

Notes: Friday 9th September 2016 - 1.8L yeast starter put on stir plate
Sunday 11th September - Mashed in 64C. Raised temp after 45 mins slowly to 75C. Total mash time 75 mins. Final mash pH = 5.37 (adjusted with 1.5mL 80% lactic acid). Sparged with approx 3L 50C water to rinse the bag. Preboil SG = 1.051.
OG = 1.052. pH = 5.28.
Yeast pitched at 22C and temp controlled fridge set to 20C. Signs of fermentation less than 10 hours later.
Thurs 22nd Sept 2016 - CO2 transfer to DH keg with 60g Nelson / 56g El Dorado / 50g Simcoe. Approx 9g/L. FG = 1.010. 5.5% ABV.
Sunday 25th Sept 2016 - Started to crash the DH keg in the keezer.
Monday 26th Sept 2016 - Keg to keg transfer from DH to serving keg.
