Notes: Prep:
Stepped up starter using DME for a high pitch rate.
Place Orange Peel in the pressure cooker with 1.5 gallons of water for one hour+ to increase extraction. Allow to cool and add pectic enzyme and rest overnight. On brew day dump it into pot with the peal.
Brew Day:
Heated honey to 110 so it flows better out of the container. Blend honey, first dose of yeast nutrient, tea, and water with drill. Aeration with drill for 2 minutes at high speed after mixed. Siphon and discard starter 'beer,' pitch resulting yeast slurry. Added 10-12 drops of Fermcap.
At 70% Projected FG second dose of yeast nutrient with gentle stir.
After 3 days at FG, rack to secondary. One week before the end of secondary add the Elderflower as a dry hop. |

Problems with mash temps. used 13.88 qts at 161 F added to 9.25 lbs of grain (71F) resulted in 147F (liquor may have cooled during mash in, add faster next time) added 4 more qts at <161 resulting in 149F. Added 2.3 qt boiling water to reach 151F (math said to add 1.3qt). pH 5.2
Sparged at 160 (15 min rest) by using 2 gal boiling water. Stuck sparge due to low sparge water temp. Possible hot-side oxidation during sparge by constantly blowing in output line of mash tun to unstick sparge. Sparge pH 5.7 (used tap water)
Used a 2-qt yeast starter with 6 oz DME and .25 Tsp yeast nutrient (71F). Pitched fresh yeast to starter 23 hrs before pitching starter to wort. Ferm started in 6 hrs.
Tastes Excellent. Nice body. Good balance. Sad its gone. I saved 3 bottles for competition.
Base beer for future Milk stout, Coffee Stout, and Cherry Stout. Hence the name Primordial. Still just a great simple dry stout by itself. |

Notes: Bell's House Yeast.
.5oz El Dorado + .5oz Azacca into 170F water to steep in french press for 30 mins, strained and added on day 5.
Cold crashed in primary on day 8. Racked to secondary on day 9 onto 2tbls sodium oxide fining to clarify. Was bright and clear ready to keg in 24 hours. Seems to work better than gelatin. |
