Notes: RECIPE MADE FOR 40qt POT (10 gal)
1) Start with 7.5 gals of quality tap water (Ft Collins preferred, ~8.5pH)
2) Heat to 168F
3) Add milled grain to grain bag within water. Mix well and avoid
dry spots/dough balls. Maintain temp at 160F for 90 mins
4)Remove grain, heat to boil
5) Boil for 60 mins
6) Stop boil, allow to cool to about 190F.
7) Add 1 oz Enigma/ 1 oz Azacca Hops. Let stand for 15 mins
8) Chill wort using copper wort chiller down to 70F.
9) While wort is chilling, sanitize fermeter with star san. (1oz per 5 gal, 30 second contact time, dump sani)
10) Sani bung/airlock. fill airlock with sani
11) Add chilled wort to fermy. Take sample and measure with hydrometer ( Goal of 1.066 sg)
12) Pitch 1 pack of Verdant IPA yeast into wort. Use sanitized scissors and nitrile gloves when handling yeast pack.
13) Seal up fermy with sani'd bung/airlock filled with sani.
14) ferment for 6 days
15) Add remainder of hops to fermenter (see hop list above). Reseal with freshly sanitized bung/airlock
16) Ferment for another 8 days. (14 days of fermentation total)
17) Refer to Racking to corny keg SOP to move beer from fermy to keg via autosiphon
18) Apply constant 15 psi CO2 pressure to keg, place into 40F fridge.
19) Wait 1 week, then serve!

Notes: Added more filtered water to the sparge water 4 liters.
used all the sparge water . used gravity to run hot wort through the the spike counter flow wort chiller (CFWC) worked quite well with minimum water use. ran about 1 liter / 45 seconds and areated itself with a stream into the plastic primary fermenter.
Plan to ferment at room temp and prime with cornsugar in keg and bottle after.
sparge method undefined. since the Rims is the process to mash and it creates the filter bed. I make the liquor for the mash and the sparge in the Boil Kettle (BK). When mash is complete and the the hot liquour tank (HTL) is used to reach mash out temp in the mash tun. then I run the hot liquor in the BK thru the Rims coil in to the top of the mash tun. I then pump from the Mashtun in to the empty BK, works great because the flter bed is established. I use the hot water in the HLT to rinse the CFWC.

151 Brew Club, Virginia
Beer was designed to emphasize phenolic notes of clove and pepper.
Spunded to 10 psi after 3 days of active fermentation
Finished beer was naturally carbonated in keg using a 75/25 blend of wildflower honey and turbinado. Subtle honey notes came thorough in the final product although a small honey malt addition could have done the same more reliably.

Notes: Add strike water and brewing salts and bring up to strike temp. Once salts have dissolved, pull off 7 qt of water to reserve for sparge.
Follow mash schedule, add roasted grains for last 10 minutes of mash.
Very vigorous boil to yield good head retention.
Or lager yeast at 70F under 5-10 psi for 1-2 weeks.
Transfer to secondary with finings and cold crash and lager around 33 - 36 F for at least 2 weeks.
Ver 2 - 5/15/26 Increased Munich from 3 to 5 lbs. Increased IBU from 23 to 45, doubled all roasted grains. |
