Notes: Primary:
- Make yeast starter with Go-Ferm
- Mix water & honey
- Add 1 can Luxardo Cherries and mix by hand
- Add steeped Black Tea and cinnamon sticks
- Top up to 3 gallons, add yeast starter, Fermaid-O, and mix by hand
Note: I used a steeping bag for the cherries and cinnamon sticks which is likely not necessary
Secondary:
- Let ferment completely there should still be some sugars left
- Rack to new fermenter
- Add freeze dried cherries in steeping bag
- Let sit for at least two weeks for flavor. Stabilize if necessary.
- Backsweeten to 1.040 and bottle
Brewer's Notes:
This is from another Brewer of Brewers Friend's, based on a SCB mead. The Luxardo cherries are awesome, but I think for the next batch I'd add some frozen tart cherries to augment the Luxardos and expand the flavor profile. I didn't notice much difference with he bitter almond, possible need to use more. I sat in secondary for 1 full month, might go faster if I crushed the freeze dried cherries. It takes about two months for this to bottle condition. It is one of the best meads that i have made. |

Forgot to add the berries to the mash, so added 50 g at FO.
Flame Out additions:
.20 g lightly crushed clove, .25 g lightly crushed grains of paradise, .5 g lightly crushed rosemary, 50 g lightly crushed juniper berries, plus box of Finnish tea with juniper.
25 lbs grain with hulls and 8 gallons water is the MAX the tun can handle!
Strike water was 19 degrees over target mash of 158, but was still not enough. Mash was 155F. So try 22 degrees over next time. Also consider a 45 minute mash.
Pre boil gravity was 1.072 (goal was 1.079), so increased the boil to 2 hours total to hit the PBG and the resulting OG of 1.092. Hop IBU's were maxed out already with the 90 minute addition, so boiling longer was no issue. Resulted in only about 4.5 gallons into the fermenter, though...
Tasting Notes:
Finally got the juniper to come through! Beer is strong, dark, viscous, and malty, with the juniper coming in over the top and the weizen yeast adding some fruit and clove, as do the spices. I carbed it like a Qaud, because, well, it's hard to drink low or non-carbed beer!
