In secondary when I added the Cascade for dry hopping, I used the zest of 1/2 a ripe Lemon. I just wanted to add a bit more fruity aroma and oils to the beer while in fermentation. |

- Mash 31L, batch 21L, mash & boil 60min. OG:1063 (refract.)
- Used 270g of oats instead of 400g as I was short.
- Cold drip used for max flavour to make it as light in colour as possible, looking for a pale finish.
- Hops chosen to be fruity to match the fruit flavours of the cold drip
24/6/19 - Dry hopped (35g & 50g dry hop changed from 40g of each)
30/6/19 - Kegged and carbed (30psi for 2:45 min), 200ml of cold drip added before carbing
2/7/19 - Pours cloudy deep orange, tight white head,
26/7/19 - It's a pretty ordinary beer, the flavours are a bit muddled with a mix of fruit and early coffee.

Notes: Mash at 150° F (65° C) for 60 minutes.
Sparge at 175° F (79° C) to collect 6.5 gallons (24.5 L) of preboiled wort.
Boil 90 minutes, adding hops and Irish moss when indicated. 5.5 gallons at end of boil.
Cool to 60° F (16° C) and pitch yeast.
Ferment at 60° F (16° C) until fermentation is complete, then siphon into secondary.
Allow to remain at cold storage temperatures 40-50° F (9-10° C) for two to four weeks, then package and condition. |

Volume of wort 1.091 = 27L, add around 12L of water to get to the desired strength. consider adjusting colour as well.
fermented down to 1.015 from 1.091. Alc 10%. 9L of water added. Final alc ~ 7%.
Note: final beer is much too pale! Correct roasted malts next time. |
