Notes: First time trying honey malt in a saison. I'm using my usual saison grain bill, though with domestic pilsner for the first time. I'm using beet table sugar for the 10% sugar component, rather than wasting honey. I might use honey to carbonate the keg or bottles.
Note: IBU was supposed to be 29, but somehow the preboil value was entered wrong! It's actually 21 ibu instead. The lower bitterness might play well with the honey malt.
30Sep2025 Brew Day:
- Mash pH est. = 5.45. pH measured = 5.22. I suspect probe drift of up to 0.15. Guessing ~5.35 actual. No pH adjustments. Replace probe asap.
- OG = 5.75 gal @ 11.5 brix (1.046). 80% efficiency.
25Oct2025 Kegging:
- Did not take FG, but know it is ~1.001. Smelled good! EKG hops seem to play well with saison. Did not prime with honey.
20Nov2025 Tasting
- Good, but leans too heavy on malt for my taste. Will rebrew, replacing honey malt addition with victory malt.

- pH should be similar. Increasing mash lactic acid from 1.8ml to 2.0ml

| Notes: After the hop stand create a whirlpool and rack as little of the sediment as you can into the fermenter. After fermentation is complete, transfer into a purged keg with the second addition of dryhops in there suspended in a bag. I use kitchen twine tied around the hop bad and the keg handle. Once transferred into the keg put on 25psi of CO2 and cold crash for 48 hours. After the 48 hours rack into a serving keg. If coming out cloudy then hit it with some gelatin to clear it up. It probably won't be perfectly clear because of all the dry hops added, but it should be good enough. |

| Notes: Brewed 1/23/21. 155...150.9. Nailed the additions. The spruce tips smelled good. OG 1.058, had good volume. Percolating strong the next morning. Slowing day 3, upped temp to 71. Still going day 8. Finally looks done day 9, soft crash to 50. Dry hop day 10. Cold crashed day 11. Transferred day 13. Smooth, killed the 10lb cylinder. Sample was excellent. FG 1.012. Added 3.5 oz table sugar with big syringe 2/5/21. Tapped 2/20/21...Delicious, the spruce is present but subtle. Almost a sweet pine. Nice bitterness. This was an excellent beer. I wouldn't change a thing. Kicked 3/5/21 (bottled 6). |
